Old Settlers' Baked Beans

This recipe smells heavenly while cooking and is something I'll make again. Instead of white sugar, I used molasses. I also cooked this in my crockpot and made the mistake of adding the ketchup at the beginning (tomatoes make the beans stay hard) so it took a lot longer to cook. 6 hours on low and another 6 hours on high. It was worth the wait!

Homemade Black Bean Veggie Burgers

Great alternative to regular burgers! I omitted the Thai chili sauce (didn't have any) and added a packet of Lipton Onion Soup mix. We ate them without a bun and topped with salsa and sour cream. I'll definately make these again.

Greek Lentil Salad

Wonderful salad! I made this while we were on vacation and ate it at almost every meal. I love lentils, but had not found a "wow" recipe in which to use them until this one. I've made it several times since and will say that the choice of dressing really makes a difference. I'd recommend Ken's Healthy Options Olive Oil and Vinegar, or one of the other higher end dressings. I also added olives and green onions and used as a dip with pita triangles.

Italian Meatball Sandwich Casserole

This was a very good recipe and one that I would make again. I used lowfat cottage cheese instead of mayonnaise, and pre-made organic turkey meatballs instead of ground beef.

Marinated Black-Eyed Pea Salad

This was a wonderful addition to our New Year's lunch and a creative way to serve black-eyed peas. Instead of using it as a salad, we served it as an appetizer with tortilla chips. My brother returned to our house later in the day to see if we had any left -- it was that good! To make it a little healthier, I substituted a cup of lowfat italian dressing in lieu of the olive oil and vinegars and omitted the bacon. Also substituted fresh cilantro for the parsley because that is what I had on hand. This recipe gets better over time, so plan to make it at least 24 hours in advance.

Grandmother's Buttermilk Cornbread

Great recipe! I made this on New Year's Day with collards, black-eyed peas, sweet potato sticks and ham and it was a big hit with our guests. Probably not something I would make on a regular basis due to the amount of butter, but it will definately be an annual treat.

Baked Sweet Potato Sticks

Yummy recipe! I made these for a family lunch on New Year's day and the garlic/onion/salt/pepper version was the hands-down favorite. I was wary of trying that combination on sweet potatoes, but it was tasty. Made great left-overs too.

Tasty Collard Greens

I've always been nervous about attempting collard greens, but this recipe was easy and delicious! Instead of fresh greens, I used frozen and cooked in a crockpot on low for 10 hours. It was flavorful and made a great addition to the bean and vegetable soup we made the next day.

Peanut Butter Cocoa No-Bake Cookies

We made this recipe last night and it was a huge hit -- tasted just like I remember from elementary school! I did make a few modifications because we didn't have some of the ingredients. I used 3 squares of baker's unsweetened chocolate instead of cocoa, and 1 cup of extra chunky peanut butter since we didn't have peanuts. We also used brown sugar instead of white sugar, and I'll probably reduce it to 1 cup next time. It is very rich and flavorful. Instead of individual cookies, we put the mixture into an 8 x 8 baking dish and cut it into bars when it cooled. They didn't turn out as firm as I would have liked, so I'll probably add more oats next time as others have suggested. I'm keeping this batch in the refrigerator and the coldness seems to keep them firm. Thanks for sharing!

Bean and Sausage Soup

This is a great recipe! The taste can vary depending on your choice of beans, so keep that in mind. We used a 9-bean blend that was delicious. I was a little paranoid about ending up with crunchy beans after reading the other reviews, so I soaked the beans overnight in the crockpot on "warm" (not low). It was bubbling the next morning, but the beans were soft. I then drained the water and replaced with chicken broth, garlic powder, onions, onion powder, basil, and celery, salt and pepper. It was cooked to perfection by noon. Serve over a hearty long-grain rice and it is a complete meal. Very tasty! We generally do not eat beans as a main dish, but I could easily eat this once or twice a week. It is very filling.

Baked Ziti I

Very good! The only modification I made was to add one can of sauce to the pasta before layering. My husband and daughter were impressed with this dish and had seconds. This is a great recipe to prepare ahead of time and then pop in the oven right before dinnertime. I served this with salad, Focaccio bread, and a bottle of red wine for the adults. I think the secret to this recipe is the sauce -- a bland sauce will make it mediocre at best. The other ingredients don't add much taste.

Focaccia Bread

I really wanted to like this recipe! I substituted whole wheat flour and it came out pretty dry. This is even after adding more water! I think it has a good foundation but needs some tweaking.

Spicy Slow Cooker Black Bean Soup

Wonderful recipe! My husband enjoyed it as well. I made a few modifications based on the other reviews -- added onion, diced tomatoes with jalepenos, diced kielbasa, and a little chili seasoning. Served with green onions and melted cheese on top. Absolutely wonderful!!

Bread Machine Rolls

These are awesome!! I feel justified in keeping my bread machine now. :) I didn't have any powdered milk, so substituted 1 and 1/4 cups skim milk in place of the water and milk powder. My husband absolutely LOVES these and requests them at least once a week. thank you!

Get a Husband Brunswick Stew
