Playgroup Granola Bars
These are wonderful! My husband and daughter really enjoyed them and I can see this as a weekday morning staple in our home. Made some minor changes based on what i had in the house: (1) subbed applesauce for oil, (2) cut brown sugar down to 1/2 cup and will reduce even more next time, (3) left out vanilla extract (4) added one packet of 'strawberries and cream' instant oatmeal for slight berry flavor, (5) brushed top with honey and returned to oven for the last 5 minutes. [Note: did a second batch because the first disappeared in a day, and used peanut butter, raisins and walnuts - delicious!!] My husband thought these were absolutely amazing and asked me to make them again for him to take to work as a mid-morning snack.

Delicious Ham and Potato Soup
Wonderful recipe! We had the crockpot version with evaporated milk listed below and my daughter who doesn't like soup LOVED it. My husband said that it was restaurant quality. Only addition was a bag of frozen broccoli/cauliflower/carrot mix and it added some much needed color and texture. I would probably use 2 bags of frozen veggies next time. We'll definitely make this recipe again!

Baked Moist and Savory Stuffing
This recipe got good reviews at our Christmas dinner, but I modified it quite a bit based on what I had on hand. Diced 3 stalks celery and one onion and let it simmer with 4.5 cups of water and 2 T butter until soft. Immediately mixed it with three 6 ounce boxes of stuffing mix, transferred to baking dish and baked it for 15 minutes @ 400 degrees. Wonderful and moist! I followed the directions on the box for the water measurement (1.5 cups per box) It really didn't need to be baked and could have been served immediately. Nice addition to jazz up plain stuffing!
