Grilled Rib Eye Steaks

Usually I prefer this type of marinade with pork or lamb rather than beef. Decided to give it a try based on the positive reviews and I am so glad I did. My family loved it. Instead of using ground ginger, I used ginger paste.

Kala (Black-Eyed Pea Fritters from the Dutch Antilles)

Made this recipe for the first time last night with several changes. I used a bag of frozen black eyed peas, thawed in water with a 1/4 cup dehydrated minced onion. Pureed this in blender, then added a tablespoon minced garlic, a teaspoon of dried thyme, the salt, cayenne pepper (also used black pepper). I skipped the egg whites and used 2 tablespoons of flax seed meal instead. I also added 1/4 cup breadcrumbs, and fried the fritters in coconut oil. They were so delicious! My vegan daughter got mad after the first bite because she thought they were crab cakes, which they sort of tasted like. My diners flipped when I told them the fritters were made of black eyed peas. I served them with a vegan mac and cheese and steamed broccoli florets.

Eggless Chocolate Cake II

Banana Pudding with Meringue

I also grew up on this recipe, exact to every detail. It is the only way I had ever had banana pudding and was never ever to replicate it on my own. Thank goodness for this recipe! It took me back to the comforts of my childhood. My family didn't care for the meringue, but for me it was heavenly!

Mayonnaise Biscuits

I have made these twice since finding the recipe, the first time using mayo, the second time using Miracle Whip. They were equally very good, just a tad less flavor with the MW. Either way, no more being the butt of the biscuit-baking jokes! Thanks!

Broccoli Coleslaw

Made this broccoli slaw this past Memorial Day and absolutely loved it, as did my family and guests. I did add a pinch of powdered ginger and a splash of sesame oil to the dressing to give it a more Asian flavor, and I added a pack of shredded cabbage & carrots to increase the amount. I will definitely make this again, thank you!!!

Mushroom Pork Chops

Simple, elegant and delicious! I altered this recipe the second time I made it by adding a cup of white wine to the mushrooms and onions after sauteeing them, reducing until almost evaporated, then adding the soup. Served with rice the first time, mashed potatoes the second, and tonight am serving this dish with pasta.

Italian-Style Spaghetti Squash

This was not bad, but I found that I had to take it in and out of the m/w and extend the cooking time before the squash became as tender as al dente pasta. Overall, the cooking time was about 22 minutes for each half of the squash, hi power.

Oven Fried Catfish

Excellent! This was my first time using the oven-fry method for catfish and I must say, this is the best catfish I have ever made in my 20 years of frying. I altered the recipe by adding 2 tablespoons of prepared mustard to the salad dressing. I found that my fish stuck to the pan, so I will spray with a little Pam before baking next time.

Mississippi Tea Cakes

Well..it just doesn't get any better than this! I was craving a sweet snack while pulling an all night studying session but unable to get to the store. It's not very often that I can find a good recipe that doesn't require that I make special trips to the market. Not until this recipe! I never would have thought that something so simple would turn out so fantastic! This is the best cookie recipe I have ever tried. THANK YOU!

Coconut Shrimp I

Cuban Shredded Pork

Wow! I made this recipe for dinner and altered the recipe by using chops with bones. Served the shredded pork with spicy black beans, rice and fried plantains. The whole family, including two very picky kids, loved it! I am definitely making this one again. Thanks for sharing!!!
