Chocolate Ganache
This is so easy and so impressive! I've used it to top cheesecake, bundt cakes and dip fruit. I didn't have any dark rum on one occasion so I used almond extract and it was a great compliment to the chocolate. Thanks for sharing!

Roquefort Pear Salad
I enjoyed the flavors of this salad very much. I cheated a bit though and used store-bought pecans that were already sugared but other than that followed the recipe exactly. I enjoyed the way the dressing complimented the flavors.

Red Potato Bites
These were great side dish to our Christmas dinner. My family loved the presentation and flavor of these. I was not crazy about the texture as the directions instructed so I would suggest cooking the potatoes a little longer. I started with a spoon to scoop the insides but quickly pulled out my mellon baller, it made the job a little easier. I didn't have chives but used green onion (scallions) and they were a welcome substitution. Will definitely make again with the changes I made.
