Potato and Cheddar Soup

This was really good. I have made this twice so far. The second time I used chicken stock to boil the potatoes along with the onions. Our family doesn't eat pork so I jazzed the soup up with a bit of Monterrey pepper jack cheese. Perfecto. This recipe is a keeper. I think next time I'll try a gourmet version, leeks, a mix of Gruyere and white cheddar.

Jamaican Beef Patties

Overall, this is a great recipe, but next time I'll decrease the meat by 1/2 pound or double the pastry. I read other reviews stating that this is time consuming...anything that requires you to make your own pastry or dough will! I felt for a beef patty that this was quite bland so I would kikc up the spices much more.

Amish White Bread

This is a basic, great starter bread for novices. I love it! I personally prefer less sweet and love to make grilled cheese with this bread. Anyway, I reduce the sugar down to 2 tbs and I do not buy bread flour as I do not bake bread that often. I used I good quality unbleached white all purpose flour which makes the loaves nice and dense. Terrific!

Chicken Chili Hash With Peppers & Cilantro

I think three stars are acceptable because if you follow the recipe exactly, your potatoes will be too hard. (I tried this several times using different potatoes.)Instead, I used left-over chicken, cubed them and tossed in towards the last five mintues. I also like my potatoes crisp on the outside so I put the entire pan in the oven for about 20 min. before adding anything else. Otherwise, nice basic hash recipe.

Easy Key Lime Pie I

This is a true key lime pie recipe! I also decided to only use four eggs, as I do not like an "eggy" aftertaste nor did I feel comfortable using two cans of condensed milk (I used one and a half). I also used two tsp. of key lime zest--be sure not to grate down to the white parts. The result was a fabulous consistency with a perfect balance of sour and sweet, YUM!

Fluffy Pancakes

They are indeed fluffy!. This tasty easy recipe has replaced my box pancakes. Oh, I also added an extra Tbs of sugar and you really do need the salt the recipe calls for!

Ninety Minute Cinnamon Rolls

Very nice, easy and quick! I will try this again. It's not too sweet which is nice when you're not in the mood for too sweet and gooey. I can make this for my kids and not worry about them boucing off the walls later!

OH MY GOSH!!!! I have been looking for a plantain tart recipe for a minute!!! MY husband loves, loves, loves platain tarts. Now that we live in Nevada, it is very hard to find West Indian restaurants. Anyway, tried the recipe and presented to my dh. He asked me what restaurant I bought them from...need I say more?

Tim's Famous Salsa Burgers

Very nice! I seasoned my meat as usual with fresh garlic, onions, salt, pepper, an egg and breadcrumbs. I also coarsly shredded the cheeses. I've made this several times; on the grill and in the oven and is always a crowd pleaser.

French Breakfast Puffs

Good recipe, just made a couple of changes the second time around; cut back sugar to 1/4, added cinnamon to the flour mixture and 5 minutes before the "puffs" were done used a sugar water glaze. In my mind made it somewhat healthier without nearly a stick of butter as a glaze. I also served them with fresh fruit slices. It was a hit!
