This was a huge hit! Made it for a get together and it did serve a lot of people. I added green peppers, used 1/2 the cheese, provolone/mozzerella instead of cheddar. Skipped the breadcrumbs. Seasoned the ground round with "Everglades seasoning" while cooking it. Really good. I'll definitely make this again.

Southern Dill Potato Salad

Very good! I left out the celery, just don't like it in potato salad. It needed to be a little "saucier" the next day so I used some heavy cream. Deelish!

Grilled Fish Tacos with Chipotle-Lime Dressing

This was fantastic! I made it for a large group and I could have used more! The marinade is really good, I will use it often for fish. I left the adobo sauce out of the dressing since we are wimpy when it comes to spicy stuff! Thanks!

Farfalle Festival

This was really good! I did tweak it a bit for our taste, but overall great! I did as others and cooked the chicken in some of the bacon fat, skipped the butter. Used FF 1/2 and 1/2, added some extra and instead of reducing it down thickened it up with a little flour and milk. Also added a can of peas. Yum!! It's a keeper!

Spicy Cranberry Chutney

End of the Line Ham Casserole

Just kind of ok. It had to cook much longer (almost 2 hours) and my potatoes were sliced in my food processor, like potato chip thickness. If I made it again I would add some heavy cream or butter.

Beer Cheese Philly Steak Casserole

Very good! I made it for Father's Day ahead of time. I think everyone will enjoy it. I had a lot of round steak which is pretty tough. So I simmered the heck out of it till it was tender. Also, I just mixed all the spices and liquids (except milk) together to simmer with the beef. I threw the onions and peppers in at the end. I sub'd a little bacon fat for the butter since I had some from another recipe...not low fat but tastes great! :-)
