End of the Line Ham Casserole

Just kind of ok. It had to cook much longer (almost 2 hours) and my potatoes were sliced in my food processor, like potato chip thickness. If I made it again I would add some heavy cream or butter.

Beer Cheese Philly Steak Casserole

Very good! I made it for Father's Day ahead of time. I think everyone will enjoy it. I had a lot of round steak which is pretty tough. So I simmered the heck out of it till it was tender. Also, I just mixed all the spices and liquids (except milk) together to simmer with the beef. I threw the onions and peppers in at the end. I sub'd a little bacon fat for the butter since I had some from another recipe...not low fat but tastes great! :-)

Broiled Tilapia Parmesan

Awesome! To keep with our low fat/low cal way of life I made a few changes. I didn't mix the topping ahead of time, just spread a dab of FF mayo on each filet and then sprinkled the spices (lemon pepper instead of lemon). Topped with fresh grated parmesan and spritzed with spray butter! I will make this one often, everyone loved it!

Chicken Florentine Casserole

Great flavor!! I did make a few changes. Used frozen chopped spinach, olive oil instead of butter, whole milk instead of cream. Left out the bacon bits. Cooked the raw chicken right on top of the spinach mix for 25 minutes at 350 then topped with cheese for another 10 minutes..did actually broil it to brown the cheese for a minute or two only. This could be a family favorite!!
