So easy and they are a nice change from the usual choc chips and peanut butter.

I made these for the holidays and I am going to make them for a Valentine's Day cocktail party. I used a few raspberry choc. chips on the bottom after the waffer and then melted more chips to go on top. A huge hit. My brother asked me why I did not make the normal size of a large cupcake. I told him eating five of these didn't make you feel as quilty. Yum!

I've made this twice now for gatherings. One man approached me with a sincere look in his eyes and said "my Mom made a cake just like this" and another coworker has asked my spouse repeatedly if I would make her this cake. Easy to do, easy to manage and a refreshing change from the chocolates, cherries and peanut butter receipes.
