Winter Energy Cookies

I think these might possibly be the best cookies I have ever made! I cut half the butter with applesauce and nixed the walnuts to lower the calorie content. However, to half the batch I added dried cranberries and slivered almonds. Fantastic and especially good as a breakfast cookie!

Mocha Coffee

Fantastic! I have a little trick for mixing the cocoa with the liquid, as sometimes this can be quite difficult. Mix together the cocoa, sugar, and cinnamon if you add it. Pour in a tiny bit of milk and stir to make a paste. Slowly add the rest of the milk and then the hot coffee. Mmmm!

Rich Chocolate Pumpkin Truffles

Wow! These were great! I would suggest letting these refrigerate overnight - it gets rid of the "crumb" texture.

Good stuff! I added 2 tsp. of cinnamon and vanilla, a little ginger and nutmeg, 1/2 tsp. salt and one apple, diced into small pieces.

Whole Wheat Bread III

Mmm....wonderful! I like to play around with the ingredients a bit. Sometimes I add more cornmeal, throw in a quarter cup of oats, add a few tablespoons of wheat germ, or substitute the honey with molasses. This recipe is flavorful, versatile, and beautiful!

Bran Flax Muffins

Mmmm! I love it! I omitted the oil as previous reviewers did, replaced the milk with buttermilk, cut the amount of sugar by 1/4 and added a bit of unsweetned applesauce for extra moisture. This recipe is so easy to work with and can be adapted/modified in many, many ways.

This bread is beautiful! It has wonderful flavors, excellent texture and gorgeous colors. Absolutely fabulous! Try a little cardamom - it enhances the rich flavors of this loaf.

Best Ever Cinnamon Buns

Overated? No way! These buns taste great, they are easy to make, and my whole family enjoyed them. Be sure to use a good quality mix. I made mine the night before and chilled them. In the morning I let them sit out and rise as usual, and they were absolutely perfect!

Lane Cake

True, this cake took quite some time. However, the results were worth it! The cake had a fabulous texture, but I omited the cherries and coconut. I also took some to my English teacher while we were studying TKM, and earned 25 points in extra credit. Thanks for this great recipe!
