Rolling Fondant

This was my second attempt at fondant - I first tried the marshmallow fondant, and it never got past the sticky stage. I tried again with this recipe, and success! I don't think I got all 8 cups of confectioners sugar in, but it was close. It rolls like a dream, and was incredibly easy to use. It's very sweet, but you don't use fondant for the taste, so I can live with it. I spritzed the bowl of my mixer with some cooking spray before I started, and had no trouble with sticking.

Hasselback Potatoes

My daughter dubbed these "slinky potatoes", given their resemblance to the classic toy. Very easy to make, and impressive presentation. Some of the larger potatoes were not completely done in the middle slices, so it's important to get potatoes very similar in size and shape.

Excellent - I made it with no butter (just no-stick spray on the pan), and it was plenty rich enough. The kids proclaimed them the best potatoes they've ever had.

Quick Weekday Pasta

Pretty bland, but unobjectionable. Very family friendly. It doesn't say what size dish to use, but I used an 8x8 pan. I mixed the cheese in with the pasta so I could add a cracker topping, which the kids like.

Saucy Apple Pork Chops

OK, the ingredients did put me off at first, but I wanted a new recipe, so I tried it, and boy, am I glad I did. Super easy, super quick, and super tasty. I love pork chops and apple sauce together, but this gave it something a little extra. The family all loved it too.

Mexican Rice II

I sauteed the onion before adding the rice, and used taco seasoning (made with the Taco Seasoning I recipe), and it was delicious. Better than a box, for sure, and no weird additives.

Mint Chocolate Cookie Crunch

Really good! This recipe makes a bunch, but it's so easy. The only tedious part is scooping out that many cookies. I used Trader Joe's Candy Cane Joe-Joe's for the sandwich cookies, so I only used 1 tsp of extract. They were VERY minty, so if I were to do it again with the same cookies, I'd cut the peppermint extract in half.

No-Cream Pasta Primavera

Wow! This is a basic blueprint for a very flexible recipe. I use whatever vegetables I have on hand or are in season - I especially love broccoli and sweet onions. I also sprinkle with a few toasted pine nuts to send this over the top. Very family friendly vegetarian dish, as well.

Lacy Oatmeal Cookies

Really good, and quick to mix up. I used Reynolds quick release w/o spray, and it worked beautifully. I used a leveled tsp for each cookie, and they came out just about the right size. I also used two different types of cookie sheets, and that made a HUGE difference in the time it took to cook, so if you're having problems, try another kind of sheet. For one type I only had to cook them about 6-7 minutes. Every couple of batches, I'd stop and let the oven heat up again for 5 minutes or so. Delicious!

Grilled Salmon I

Really good - I cooked at 450 for 13 minutes, and forgot to broil it, but it was delicious. Moist, perfectly cooked, the salmon had a hint of sweetness from the sugar, but it wasn't overwhelming. Super easy!

Mini Ham And Cheese Rolls

I thought these were pretty good, but I served them at bunko, and people raved. The recipe doesn't sound like much (toasted ham and cheese - that's a recipe?!?) but these go on my list of go-to appetizers.
