Garlicky Baked Butternut Squash

When are you supposed to add the cheese? With the oil mixture or at the end? Liked this, did not love it. A little too salty, didn't love the parmesan cheese with butternut squash.

Chocolate Chip Pancakes

Good recipe. Used half white whole wheat flour, which gave it a bit stronger aftertaste, but the kids still ate them up. Did not use the syrup, chocolate chips are sweet enough!

Swiss Chard with Garbanzo Beans and Fresh Tomatoes

This dish was pretty good - I used kale instead of swiss chard. I think next time I will use cannelini beans or some other bean because I am just not a fan of the texture of garbanzo beans.

Beef Tenderloin With Roasted Shallots

Very good. Left out the last bit of butter in the sauce to save a couple of calories and it was plenty rich without it. The sauce has a sweet edge to it, which I wasn't quite expecting. If I made again, may try pureeing the gravy as the big hunks of shallots were not so appealing to look at...

Banoffee

This is yummy, its just the boiled milk I had a bit of trouble with. Mine came out kind of clumpy and didn't pour over the bananas, but I had to spread it, sort of like a peanut butter consistency, but a bit more rubbery. Therefore, the first can didn't cover my bananas, so I had to use the second can I boiled. Now maybe my toffee to banana ratio is off and it will be just too much...Also, be careful when you first open the can, I used a bottle opener and it spurted out onto my hand - hot sugar - ouch!

Stir-Fried Vegetables

This is a very good basic recipe, but I would have liked just a bit more flavor in the sauce. I added a little more soy sauce and three cloves of minced garlic along with the ginger. Next time I may try even more garlic and maybe oyster sauce or teriyaki just to jazz it up a bit more. (Maybe I am missing the monosodium glutamate from the Chinese Restaurant!!) Anyway, works very well with whatever variety of veggies you have on hand. It will stay in the recipe box!

French Toast Casserole

very good - but I got nervous when the custard didn't seem to moisten the top half of the pan of bread - so after I had already put on the cinn/sugar topping and butter, I decided to dump out the pan and mix evertyhing in a large bowl to evenly distribute the egg mixture. After putting it back in the baking pan, i added more toppings again. It was pretty good this way, but I think it would have been too dry and maybe not as flavorful had I not taken that extra step. Served for dinner with ham slices and applesauce.

Irish Soda Bread

Good - but I did not have to bake for an hour and 20 minutes - probably only 55 minutes or so, and even then the crust was very dry and a little overdone. The middle was a nice texture. I am sorry I cut back to just 1 cup of raisins, I think the recipe is correct on this, 1 1/2 would have been better. I would have liked a touch more sugar, as well...

Hasty Chocolate Pudding

Very good, I like the idea of making my own pudding rather than using the box mix with all those other additives. I did detect a slight corn-starchy taste, but not overpowering. Also, I must admit I forgot to add the vanilla at the end, so maybe that would have smoothed out the flavor a bit. I had a little trouble getting rid of the lumps in my cocoa and cornstarch, so might consider running it thru the sifter first. Will continue to play with this recipe.

Very good. Not too much of the coconut or pineapple flavor comes through - just moist and dense in texture. Used whipped cream cheese frosting from this site, which was super.

Crustless Cranberry Pie

Good, but more like a coffee-cake baked in a pie-pan than a true pie. Lots of cranberries make this quite tart, so just be prepared, you might want to serve with ice cream or whipped cream.

Bodacious Broccoli Salad

Too peppery for our taste, and a bit too acidic as well. I would agree with a previous reviewer who recommended a milder vinegar and no lemon juice. The classic combination of salad ingredients is fine, its just the dressing that is off. I have also seen similar broccoli salads that include sunflower seeds or nuts for crunch, which I like. I will remove this one from my recipe box and keep looking for a better one...

Frosted Cranberry Drop Cookies

The cookie itself is 5-star quality, but I rated this 4 stars because I did not care for the frosting. It turned out to be an unappealing beige color, not white, and was more like a heavy buttercream frosting, more suitable for a cake. The cookies are tart and do need a little sweetness on top - after frosting only a few cookies and throwing the rest of the frosting out, I made the glaze from the "Iced Pumpkin cookies" on this site and that did the trick. BTW, those pumpkin cookies are easy, delicious and perfect for the fall holidays as well.

Dark Chocolate Cake II

I followed the recipe exactly, used Ghirardelli cocoa, and was just not that impressed. Did not have a very intense chocolately flavor. It was very easy to make, just as easy as a mix, but tasted about the same as a mix, too.

Blueberry Buckle

Four stars because the flour needs to be adjusted to 1 1/2 cups, but otherwise a delicious recipe. Added a little cinnamon to the flour mixture. Made once with blueberries (toss with a bit of flour to keep from sinking) and once using fresh peaches. Yum. Also subbed buttermilk for regular milk one time, worked fine.

Buttermilk Parmesan Potatoes

Good recipe, but a little bland as written. I would recommend increasing cheese and/or adding herbs like dill or rosemary and more garlic. I will try again with these changes.
