About this Cook
I've been cooking (at least helping) for as long as I can remember. I love trying out new recipes, but it's very hard for me to follow the directions exactly.
My favorite things to cook
I especially like trying new soup recipes and baking my own bread. I love spending Sundays cooking all day for my family.
My favorite family cooking traditions
Grandma's homemade chicken & (rolled) dumplings.

Stuffed Guinea Squash (Eggplant)
Made this last night and we LOVED it. I altered it a bit, so I can only give 4 stars. I added 1 T each parsley and lemon juice, reduced the bread crumbs and added half a chopped bell pepper. I pre-baked the eggplant shells 10 minutes. I covered the stuffed eggplant with foil for the first part of the baking and did not add the cheese on top until the last 10 minutes, baking uncovered.

Daddy's Fried Corn and Onions
Simple, easy and fast side-dish. I added just a little bit of fresh minced garlic.

Grilled Veggie-Portobello Mushroom Burgers
This one is a regular meal at our house now. I often make my own balsamic dressing, mix & match veggies including onion and bell pepper, and use different cheeses at times. Yummy!
