Raspberry Trifle

I modified this recipe slightly to work with what I had on hand. I used one package of raspberries, one of strawberries. I used one cup of heavy cream. I didn't seperate the berries from the juice, I did cake, berries and juice, and cream cheese mixture as my layers. I was thinking a little grand marnier or amaretto splashed on the cake layers could be quite tasty as well. I'm going to try that next time!

Chewy Peanut Butter Chocolate Chip Cookies

My husband loved these! I used about a cup of peanut butter and an extra 1/3 cup of flour based on other reviews, and these were soft and slightly chewy cookies, with a tiny bit of crunch on the edges. I baked them until they had brown edges, and now I have a new cookie in "the cookie rotation" I also substituted milk chocolate chips since that was what I had in the kitchen.

To Die For Blueberry Muffins

Classic Spanish Sangria

I loved the original recipe, but now I have played with it, and I like it even better. I use a fruit punch juice (whatever's on sale), strawberries, limes, bacardi limon with the wine and triple sec. I have also used a chardonay for a little variety. It has to chill all mixed together for at least 2-3 hours. If for some reason you have extra, pull out the lime slices and it usually keeps pretty well overnight.

Key Lime Cheesecake II

I used someone else's suggestion to use half lime/half lemon juice to replicate key lime juice (key limes are v. expensive in MN), and it was just great. Two of my husband's favorite things, key lime pie and cheesecake, in one dish! I always use a knife to separate the baked cheesecake from the pan before letting it cool, and it hasn't cracked on me yet!

Black Forest Cake II

I used kahlua instead of coffee in the filling, and I "oopsed" and forgot to put the cherries on the first layer, but it still tasted great. It was actually better the second day after the flavors blended, as the first day it was too sweet. I also can't cut a cake in half at all (my talents lie in other areas), so I divided the cake batter into 3 cake pans and baked it for a little less time, and it worked out great!

Cream Cheese Frosting II

Chocolate Lovers' Favorite Cake

I made this cake for a friend's birthday and we really liked it. I used mint extract instead of almond extract which was really nice flavor. Instead of mixing the chocolate chips in the batter I sprinkled them on top of the batter once it was in the pan and then covered them with the littlel batter I scraped from the sides of the pan, so the melted in more rather than having chunks of chocolate as other reviewers had mentioned. I only used 4 eggs instead of 5 cause that was all I had home, which might have been why it didn't turn out quite as good as I was hoping. I will definately make this again using the mint extract. Thanks for sharing this recipe.

Grilled Marinated Shrimp

Yummy! I think I used a bit too much hot pepper sauce, but my boyfriend ate one that fell to the bottom of the grill cause he didn't want it to be wasted it was so good.

Garlic Chicken

We enjoyed this, but it wasn't overwhelming. I forgot to put the parmesan in with the breadcrumbs, so I sprinkled some on while baking. I added a dash of cayanne pepper to the breadcrumbs along with some parsley and garlic powder to give it some more flavor.

Chocolate Mint Pie

I doubled the ingredients and made this in a 9 by 13 inch pan to take for a birthday party and everybody loved it. I didn't have enough mint-chocolate icecream, so I used vanilla for the bottom layer. The cut pieces looked very pretty with the different colors.

Angel Hair Pasta with Shrimp and Basil

We used precooked shrimp, so I cooked up the sauce and just added the shrimp at the end so they would get warmed up and not tough or chewy. The sauce thickened up nicely when I made it, and I added a little more wine than the recipe called for because it was thickening too quickly, before the pasta was ready.

California Chicken Spaghetti

I used canned diced tomatoes instead of fresh, and it turned out very well. Next time I would drain most of the liquid off first, but it was excellent. The leftovers were good reheated later too!
