Green and Red Tomato and Corn Soup

We have friends who are vegans, and they loved this soup just as much as we did (and we like a bit of meat with our meals) I added a chopped leek (was in the fridge) and tomatillos since green tomatoes are a seasonal item here in MN. I also used canned tomatoes instead of fresh and frozen corn instead of fresh. The weather dudes are talking inches of snow tonight. . . fresh is what is on hand. I also added a can of black beans per another reviewer and I added some chopped jalapeno since most reviewers recommend more heat. The jalapeno gave just enough for heat for those with milder palates, but some of us added a dash of hot sauce too. Thank you for this idea. A taste of summer in the winter.

Mama's Italian Wedding Soup

Perfect for a cold winter day. I used more parm and bread crumbs in my meatballs along with some garlic powder and a bit of oregano (it's not italian without it IMO). I used mostly homemade turkey stock (great way to get flavor out of the leftover thanksgiving bird) and I added about 2 cups of water since it just didn't seem to have enough liquid. I also added some leeks since I had them in the fridge. Very tasty and you could add/subtract what was on hand to make it.

Bacon-Wrapped Chicken Stuffed with Spinach and Ricotta

It's a keeper! My husband loved it. I added some scallions and some grated garlic to the cheese mixture to pump up the flavor based on other reviews. I butterflied the chicken but skipped the pounding it flat and didn't seem to have a problem. Since some people said it was greasy, I baked them on a rack set over a foil lined jelly roll pan so the fat just dripped off and very easy clean up. I wrapped the bacon pretty tight, but I used the toothpicks as insurance.

Vegan Sun-Dried Tomato Pesto

We were having friends over who are vegans, and this was a hit both with them and for us. I added a couple of roasted red peppers since I ran out of the tomatoes, used walnuts in stead of pine nuts (on a budget here) and squeezed in a bit of lemon juice just for brightness. I mixed in some parm into the leftovers and that was yummy as well.

New Potatoes with Caper Sauce

I had russets instead of new potatoes so after I mixed in the sauce it turned into a "rustic mash" but the flavors were great. Don't forget the parm!

Yummy! Going to try it with mangos after I finish this batch. We made up a "pina colada martini -2 parts pineapple vodka, 1 part coconut rum, half a part half and half shaken with ice then strained. Yummy! Update: Tried with the mangos, very good but a bit on the sweet side for our tastes. The mango version went great with a squeeze of lime and a bit of sprite/diet sprite. I bought another sun tea jar so I could have both varieties at once this summer.

Simple Sicilian Salad Dressing

So fresh and easy. I tripled the recipe and grated in one clove of garlic since we like that. Friends raved about the salad (romaine, carrots, bell pepper, chyote, feta) with this dressing.

Lamb Chops with Balsamic Reduction

It's hard to go wrong with lamb, but this was a great simple recipe that was just delish. The weather was perfect for grilling today, so I did a quick sear of one side of a rack of lamb in the pan, then I moved it to indirect heat on the grill to finish for that smokey flavor. Plus I had the pan drippings from the one side sear for the sauce. I served it with a leek risotto, roasted red peppers and peas. Delish.

Grilled Sea Bass

I only made one small change and it was delish! I combined the butter and olive oil together with the garlic, and drizzled it on after cooking. Very tasty. I'm going to try it with other fish varieties (tilapia, cod) since sea bass is kinda pricy. Definitely worth the money though

I personally can't stand banana liquor so I switched it to a wild berry schnapps. Yummo! My change made it a bit sweet, so maybe a splash of lime juice, but thanks for the inspiration!

Javanese Pork Tenderloin

Flavor: Excellent. Texture of sauce: gritty/grainy/not making sauce again. I will try this again as a marinade only using maybe a Tbsp of peanut butter instead of the full amount for the flavor but the refrigerate and reheat gave a weird scrap off the sauce texture. Other minor changes: used pork chops instead of tenderloin as what I had at home, and baked instead of grilled since my grill has snow on it (it's still winter in MN)

Grilled Mahi Mahi with Roasted Pepper Sauce and Cilantro Pesto

Excellent recipe! I used prepared basil pesto since I don't care for cilantro and it was delicious! I served it with gnocchi and peas, with a nice white wine. Like at a restaurant, and it only took 30 minutes at most.

Margaritas on the Rocks

I scaled the recipe for one since it was just me, and I mixed it in a cocktail shaker. I used my home made sweet and sour mix (half sugar/half splenda) and it was just perfect. Had to make another one!

Raspberry Cheesecake Stuffed French Toast

Very Good Recipe, especially after using some of the reviews to improve it. I used only 3 eggs and about 1/4 cup of milk, and I left the sugar out of the mix completely. I only used a pinch of cinnamon. Instead of using 2 seperate slices of bread and sandwiching the filling, I cut 2 inch sections and "butterflied" like I would if i were going to stuff a pork chop (easiest way to explain it). It worked really well, but next time I think I will cut 1.5 inch sections of bread, they were a little thick.

The Best Pizza Crust

Very good. I used olive oil instead of margarine and added about 1/4 cup more of water based on other reviews. I also added a little bit of garlic powder for a little bit of flavor. I thin I will make this crust again.

I only used 2 oz of sour mix and I left out the salted rim. Very yummy, and I am planning on trying with different flavored liqueurs instead of raspberry, such as melon.

Dried Cherry Cake

Yummy, I made a few changes so I'm rating on what I made. I used plain yogurt with a tsp of vanilla instead of vanilla yogurt since that was what I had a home. I also added half a cup of oatmeal since the batter was super moist. It turned out great with those changes. Happy eating!

Slow Cooker Turkey Breast

Yummy, tender and moist. From reading the reviews, it seems like how long it takes depends on how big and/or if your turkey has bones. I added a splash of broth to the bottom of my crock pot but otherwise followed the recipe exactly and it was perfect. Who needs gravy, we just spooned some of the broth/"turkey juice" over the meat before serving.
