Dinah's Baked Scallops

Yes I changed the ingredients but the concept is great. I've been trying to replicate this great basil pesto tomato scallop dish we had on the outer banks and this method came the closest. Sliced tomatoes on the bottom of the dish. I mixed premade pesto with about a cup of white wine and drizzled that over the scallops and tomatoes. Covered the top with a couple handfuls of panko, then used my olive oil sprayer (misto) to lightly coat the top. Baked as directed. YUMMY!

Belles Hamburger Buns

Very good. I think part of my problem was my portions when divided into the rolls weren't quite even as they didn't bake evenly. The taste was great. I didn't need quite as much flour to get the "sticky" dough that the good reviews mentioned but overall very pleased and will make again

Buttermilk Honey Wheat Bread

End product was good but I was pretty worried during the process. I used bread flour instead of AP, and I needed to add about another cup and it was still Sticky, almost like a batter. The flavor was good so I let it rise for almost 2 hours before baking. It never rose how I hoped, but the taste/texture were Great. I'm wondering if my buttermilk was too cold? I used my kitchen aid for the mixing. Sliced it and served it with the ginger glazed mahi and greens as a sammich. DH loved it

Swedish Cured Pork Loin

Deliciously different! I cut back on the salt and added a pinch of black pepper to the rub. After 24 hours, I rinsed really well and seared it for the flavor/color then into the 325 oven until 150 (about 45 minutes for my 2.5 pound roast) and then tented. I prefer my pork a little more medium than well (and everything is dead above 140 anyways). Served with the apples and onions from the apple and onion pork chops from this site with roasted potatoes. Will definately make this again for company and try using the grill when it's warmer out

Curried Chicken with Mango Rice

Good simple weeknight meal. I used brown rice (all I had) so my cook time was longer. Also added half a red onion to the rice and some grated ginger. I marinated some shrimp in sirracha and white wine and sautéed separately since they would be overcooked if cooked with the rice. Will try again with chicken. Definiately marinate the protein otherwise it could be a bit bland.

Buttermilk Pancakes II

Very good. Biggest complaint is that it makes waaaay more than 12 5inch pancakes. I got 12 pancakes plus 6 4 inch waffles. Took another reviewers advice and started making waffles (which were very good) so I could be done with brunch in time for dinner. But the taste and texture were great!

Easy Focaccia

Very good. Didin't add parm to make it for vegan friends, will if it's just us in the future. Only problem was it really didn't rise well, either the first or second times. My yeast are getting older, maybe that was the problem. I will definitely make again. Went well with bruschetta and pesto dips, or on its own.. Buttermilk Pound Cake II

ohh yeah! I switched up one cup of flour for whole wheat (we are "healthy" here) and used 1 cup brown sugar, 1 cup splenda for baking and 1/2 cup regular sugar and it was delicious. Even after I forgot the baking soda it still was yummy and rose a bit. Will make again and again and. . ..

Thai Red Chicken Curry

Very good. I marinated the chicken in low sodium soy sauce, garlic, ginger, b pepper for about an hour before cooking it. Used pea pods instead of zucchini and it was very nice and quick dinner. Served over brown jamsmine rice

Wheat Germ Whole-Wheat Buttermilk Pancakes

I used baking powder instead of soda since that made more "sense" to me. Very light and fluffy. Almost too fluffy since the outsides were pretty dark to get them cooked through. Tasted DELISH!

Creamy Black Bean Dip

I had some leftover home cooked black beans to use up. Another recipe I saw somewhere called for about half a cup of salsa with the blended beans, which I thought was a pretty close approximation to your recipe and it worked out very easy. Added a squeeze of lime to up the acid and a bit more garlic. Might not look pretty but sure tastes great.

Grilled Salmon Fillets with a Lemon, Tarragon, and Garlic Sauce

Yum! Loved the sauce and I don't really like mustard or mayo (DH picked out recipe) but it went great with the fish. One tiny change, used lime instead of lemon and thyme instead of tarragon, since didn't have the others in the house. Think I want to try the sauce again with a bit of dill. Also think the sauce would go great with crabcakes. Getting hungry again. . .

Excellent! I added a bit of white wine and more garlic. I had the jumbo shrimp and only marinated for 30 minutes. Maybe good for smaller shrimp, but next time I will leave in for at least an hour

Brazilian Lemonade

Cool and refreshing. Like other reviewers substitued 1 cup of citrus rum for one of the cups of water. I can't stand straining things so I zested the limes and then juiced them really well, and I used 3 of them. Instead of the sweetened condensed milk I had to use half and half since was out. And since my blender is wimpy I served the drink "on the rocks". Perfect after a hard afternoon of yardwork. . . or reading a book. . . or whatever

Blueberry Cream Cheese Pound Cake I

Love this recipe! I used butter instead of oil and added a 1/4 cup plain yogurt for moistness and used a full pint of blueberries. I had to bake it about 10 minutes longer than the recipe called for but I think that was due to my changes. The girls at work ate it up and DH said it was like a giant dessert blueberry muffin.

Mango Salsa

Very easy to make and able to adapt for what I have at home. I used a white onion instead of green (not at home) and I didn't have any red pepper so that didn't go in either. I added a clove of minced garlic as well since everything is better with garlic. It went great with pan seared mahi mahi and rice.

Rosemary Pesto-Crusted Lamb Steaks

I am guilty I changed the recipe but it still was GREAT! Really wanted to grill some beef strip steaks so I left out the bread crumbs and made a seasoned butter-pesto which I put on top of the grilled steaks. I figured if I tried to grill with the crust on it I wouldn't have a deck left. Can't wait to try it with lamb sometime soon too, and I'll try it then the way it was written. Thank you!

Slow Cooker Italian Beef for Sandwiches

Easy and yummy! I used the italian dressing mix recipe from this site and dumped that and all the other seasonings into a bowl and made a mini rub for the sirloin roast I had and let that stand for 10 minutes before into the slow cooker. I did mine on high for the first hour or so and then low for another 6 or so. I tried to pull the meat out to shred it and it fell apart, so I just took tongs and shredded/pulled it apart in the crock pot, and put the whole crock pot out with tongs for people to grab right out of the juice. Good rolls/buns and hot peppers with provolone make it even better.

Meatiest Vegetarian Chili from your Slow Cooker

Made this for a party with vegans and meat lovers in the crowd and everybody went crazy for it. I followed the recipe pretty closely just changing for what was at home (2 cans of pinto beans and 1 can of black) and 2 minced jalapenos and a teaspoon of hot sauce. Makes a HUGE pot of chili. I did it in my enameled dutch oven as my slow cooker was busy with the "slow cooker italian beef for sandwiches" from this site (also very yummy)

Cheese Garlic Biscuits II

Used half whole wheat/half regular flour to make them "healthier". Also used a mexican shredded cheese blend since I had it in the fridge. Used buttermilk instead of regular milk for tang and added garlic powder and black pepper to the batter instead of on top. Joked with DH after that we needed to throw the leftovers to the neighbors dogs to keep us from eating the whole batch since I didn't think I could safely hide them in the house. They were tooooooo good!
