About this Cook
Mother of 4 grown sons, happily married to the same man for 34 years, I love to create new recipes. I'm low carb being diabetic, my husband prefers weight watchers, my son that is living at home is on another special diet for health reasons, so it is a challenge to come up with tasty recipes that fit all our diets and needs.
My favorite things to cook
Pizza is the first love in our house so we are always coming up with different pizza ideas. I love cooking Italian foods, and Mexican foods the most. Also I'm always trying to find and create low carb, sugar free desserts.
My favorite family cooking traditions
I use to love Christmas time baking with my mother. We always made cut out Christmas cookies and decorated them and fudge. It became a tradition at our house to make the same cookies and everyone did their own decorations.

Roasted Red Pepper Soup
Excellent!!! Very yummy! Made it for company today and it was a hit. I added a little red wine and extra virgin olive oil to it otherwise made it as stated. Loved it!!! It will be a keeper for sure.

Zucchini Patties
Definitely will be one of my favorites from now on and I'll make it a lot! I did make a few changes to fit my own low carb diet, by substituting almond meal for the flour, and I added another egg and onion and garlic powder instead of the onions. But I didn't want to give it anything but 5 stars because it was just so good!!!!

Sweet Sausage 'n' Beans
This was incredibly good and my family decided it was a keeper. I probably cannot rate exactly since I did change a lot... I'm diabetic so I low-carbed it and took out the sugar by using sugar free ketchup, and Brown Sugar Diabetasweet and reduced it to 1/4 cup. I also used black soy beans rather than baked beans and increased the amount of ketchup to 3/4 cup. Didn't use the lima beans. So even though I changed a lot, it turned out to be a hit. I added garlic, hot sauce,worcestershire, liquid hickory smoke, and onion powder.
