Spiced Pumpkin Seeds

These came out really good. I'm glad we took the extra effort to save the pumpkin seeds from our pumpkin carving party today to make these. Yum Yum Yum!

Squash Stuffed Chicken Breasts

Loved this! It was easy to make, just took the time to chop up the vegetables. Used seasoned breadcrumbs instead of flour as suggested previously. Also browned the chicken prior to stuffing to make it easier. It came out really really well. Even my picky son loved it which is why it gets 5 stars!

Spinach and Potato Frittata

This recipe was SOOO easy. I used 2% cheddar cheese and 1% milk and it turned out great. 5 Weight Watchers Points per servings. So delicious. Next time I'm going to add tomatoes I think. This is definitely a keeper!!!

Blueberry Salad

The topping on this was great. The jello didn't dissolve very well, but it was probably cook's error. I've heard though that pineapple negatively affects how jello sets, so that may be it too. The taste of this wasn't too well received, the pineapple/blueberry/raspberry combination didn't really go over well. It tasted "okay", but just wasn't really loved.

Silver White Cake

This cake was fairly simple to make. It is a great cake for decorating. I used it to make a flag cake for Fourth of July. It is very yummy.
