About this Cook
I am a stay at home mother of 4. I've always wanted a big family, with lots of kids that come home for Sunday suppers with all their luandry. I'm also a very proud Marine wife of 10 years. I've been all over the place. We have lived in CA, then we moved to NC. Boy was that a drive! And now we are in Vina Del Mar, Chile. It is a big culture shock. Most of my favorite recipes I can not make over here. I am a simple girl who loves to please people through the food I cook.
My favorite things to cook
I love southern food or comfort food, same thing I guess. I also enjoy baking. But I'd have to say my favorite things to cook are really anything my hubby and kids will love.
My favorite family cooking traditions
I love to be in the kitchen with my kids. Passing on what I know so they won't be afraid to cook for themselves. Holidays are a special tradition. Having family around me and enjoying what I make is special to me.
My cooking triumphs
My husband is a bit of a picky eater, so anything that gets his approval is a triumph for me.
My cooking tragedies
I would have to say the first time I tried to make manicotti, which was in the begining of my hobby. I forgot to sauce the bottom of the pan before I layed down the manicotti and when I tried to serve it up it was stuck to the pan and somewhat burned. My husband felt sorry for me and tried to eat it anyway...awe.

Lemon Square Bars
I suggest following the recipe. I don't understand why others automatically change a recipe before trying it and then gives it five stars, ugh! I like a little more filling over the crust, other than that this was a pretty good recipe!! I also had to cook it a little longer...could be due to using a celcius oven rather than farenheit.

Beef Nacho Casserole
Just getting in from soccer and having to rush off to an award ceramony at school I had only minutes to throw it together. I was running back and forth from the computer to the kitchen and on the phone (don't know why I didn't just print the recipe) I didn't have salad dressing but did have sour cream, totally forgot the corn and salsa...oops! I added beans and it still turned out great. Everyone liked it. But next time I will take the time to make it as the recipe states, but I will still add beans...love em. I will also be better prepared on a busy day!

Slow Cooker Taco Soup
I loved this. I am not the biggest fan of thick types of chili, not that this is chili. But I used all black beans because I wasn't sure what type of chili beans the author meant. I loved the corn in it, what a twist. I just have to say this was so fabulous. I will be making this instead of chili!!
