Christmas Breakfast Sausage Casserole
This was delicious even with all the reduced fat/calories changes I made. We try to eat pretty healthy, so I changed the sausage to Morningstar Farms vegetarian sausage, used two whole eggs and three egg whites, used skim milk, and used reduced fat cheese with just a little regular on top. My whole family loved it, and no one even knew it was a lower fat version (although we normally eat these lowfat foods, etc.).

Chili-Lime Chicken Kabobs
Simply delicious! My whole family, including 5 and 8 year old boys, loved it! I added it to my "old stand-by list." I also marinated red, yellow and orange peppers and onions. However, I skewered them separately from the chicken since they grill faster. The few leftovers we had we rolled into fajitas with the peppers, onions and a little salsa. Yummy! Thank you!

Three Pepper Chicken
I was very disappointed at this recipe. My whole family found it bland and uninteresting. I too found that the crumb coating started to burn before the chicken was done, and I ended up having to cut my chicken into smaller pieces in order to cook it adequately without further burning. Adding more broth helped make more sauce, which helped a bit. I don't plan to make it again.
