Extreme Chocolate Cake

I had a craving for chocolate cake, but hadn't been to the grocery store in a couple weeks and the pantry was down to bare bones. I didn't have the ingredients to make the chocolate cake that I usually make, so I found this recipe online and tried it. It was delicious! Exactly what I wanted. I added some mini chocolate chips on top for texture and substituted applesauce for the oil. I used dark chocolate cocoa powder so the color of my cake was very dark, but I prefer dark chocolate so to me it was perfect!

Mexican Fiesta Pasta Salad

I coordinated a Mexican / Southwest themed tailgate party and made this salad. The only change I made was omitting the olives. It was easy to make and very good! I might add a little more "spice" the next time I make it.

Mini Meatball Subs

My husband requested meatball subs for dinner and I had never made them before so I came to allrecipes for help. I omitted the crackers and instead of making the mini version, I used regular Italian rolls and put three meatballs on each roll. Excellent!!!

Spicy Bean Salsa

I thought this was a very good basic black bean salsa. I used fresh jalapeno peppers, fresh tomatoes, two cans of black beans and no black-eyed peas (my husband doesn't like them) and frozen corn instead of canned corn. Next time I will add more "spice" because it was not spicy at all, but it was very good... and healthy!

Cornbread Muffins I

I'm pretty picky about cornbread and have only found a couple of recipes that I like. This was not one of them. I made a batch of these to compliment a crockpot of chicken chili for a group of 10 people. The chili was devoured but no one liked these muffins.

Cinnamon Coffee Cake II

I made this for breakfast, but it tasted more like a birthday cake. I'm not fond of box mix recipes but thought this one looked promising... but there are much better coffee cake recipes out there. I will not make this again.

Sweet Restaurant Slaw

I used mayo instead of salad dressing, only used 1 tablespoon of olive oil and used celery seeds instead of poppy seeds. This was the best coleslaw I have ever made and will make it again!

Todd's Famous Blueberry Pancakes

I had a lot of blueberries that I had to use up and I didn't have a box of pancake mix, so I used this recipe. Let's just say that I will never purchase a box mix again! I used King Arthur White Wheat Flour to up the nutrition. I'll be making these again and often!

S'mores Crumb Bars

I made these for a party and they were so good and easy to make that I made another batch for a tailgating event the next day! Great recipe if you want to throw something together quickly that everyone will like. The only thing that takes time is waiting for them to cool, but you could speed up the process by putting them in the refrigerator or freezer.

Herb Turkey Rub

I mixed this concoction up the night before and let it sit at room temperature overnight. I used dried spices instead of fresh spices and used half olive oil and half butter. I rubbed it under the skin of the turkey before roasting and it came out perfect! After dinner when I was removing the leftover meat from the turkey I didn't even have to use a knife! It was coming off the bone very easily - almost like a rotisserie bird! I will use this rub every Thanksgiving from now on.

German Sweet Chocolate Pie

My mother-in-law always makes chocolate pie for my husband for Thanksgiving. Since she wasn't joining us this year I decided to make the chocolate pie. I wanted to make something a little nicer than the standard Jello pudding chocolate pie, and this recipe fit the bill. I used an Oreo crust and topped the pie with crushed mint Oreo cookies. It was a hit, and VERY easy to make! It was the first of the Thanksgiving desserts to be finished off.

White Bean Dip With Garlic Sticks

I had some old hamburger buns that needed to be used up so I sliced them into 1 inch strips with a pizza cutter and used them in place of the white bread. The bread sticks turned out FABULOUS! I would give them 5+ stars. The bean dip was good but kind of bland. I think it would be better served with pita chips or celery as it tasted more like hummus mixed with pesto. I would give the bean dip 3.5 stars.

Nova Scotia Blueberry Cream Cake
