Purple Plum Pie

I am a great pie maker and something is off in this recipe. I noticed when putting the filling together that the filling was very wet. My baking instict was to add some corn starch and heat it on the stove top but I like to stick to the recipe when I am making something for the first time. I didn't add the corn startch. BIG MISTAKE! My pie was pie soup. The taste is nice. I am going to experiment with this one. I am thinking maybe adding some firmer fruit like apple and putting in a bit of corn starch. Maybe some types of plums are much jucier than others and this is a factor. What a bummer!

Chicken Breasts Pierre

This is a delicious meal. I have been making it for awhile now. Great over rice or noodles. I like to add mushrooms, onion and peppers. Substitute balsamic vinegar for the white vinegar and Worcestershire sauce. Thanks for sharing this flavorful recipe.

Spinach Stuffed Chicken Breast

I think this recipe is great but two things did not care for. Might be a personal preference. I don't like the greasy half cooked bacon thing in any recipe. So after trying the recipe as written first I added chopped bacon to the stuffing mixture instead of wrapping it around the chicken. Also found the chicken itself to be a bit bland so I marinate it first with balsamic vinegar, oil, garlic and pepper. Love the vinegar taste with the spinach and bacon. Thanks for sharing the recipe.

Mainely Fish

I thought this dish was a great idea but the flavor was blah. The foil steaming method of cooking makes everything watery. Curious if a little wine added in there might perk things up? I like the idea of this recipe but not the bland taste. I found myself adding a lot of salt because of the blandness.

Microwave Oven Peanut Brittle

This is an excellent recipe for brittle. Makes clean up a breeze. I like to try it with different types of nuts. Have been using it for a long time. Tastes just as good as the stove top kind but takes half the time. Thanks for sharing it.

Honeyed Ham Glaze

I did not care for this glaze at all. I think it was the ketchup that I didn't like much. It tasted like sloppy joe mix. Not a flavor that went well with ham at all.

Easy Chicken Fajita Soup

Great flavors in this soup. Thanks for sharing. Second time I made it I roasted the peppers on the stove. Added a great smokey flavor. I broil strips of corn tortilla brushed with olive oil and sprinkled with taco seasoning and add them for crunch. A little corn is nice too. Recipe is 4 stars without the changes.

Red Chard and Caramelized Onions

I didn't care for the sweet flavor of this dish. The carmelized onion was sweet enough without the brown sugar added. Also I found the olive taste a bit off putting. This was my first time making red chard. I loved green so I was hesitant to give this recipe a lower rating. Maybe I just don't like red? Hubby didn't care for this one much either.

I had never had a popover before. They are interesting. What I didn't like was lack of flavor. I added chives and cheddar cheese the second time I made them and enjoyed them more.

Soda Cracker Chocolate Candy

Family loves this candy. I don't make it often because we would all be enormous because you can't stop eating it. My only complaint is I wish it was a little less sticky/chewy. It makes me nervous I will losen up my dental work(ha,ha) Yep and I still keep eating it because it is yummy.

Prosciutto Wrapped Melon Balls

I don't like it with honeydew melon. Tried it with the cantaloupe like others suggested. So yummy. Guests gobbled them up. You can really play with the presentation. I do a melon ball with a prosciutto bundle on a tooth pick or just sliced in cubed and wrapped in the prosciutto. Minus the honeydew i would give this recipe 5 stars.

Cream Cheese Squares

These were confusing to me. Tasted more like a breakfast item or something but was too sweet. I didn't care much for the grainy texture on top from the sugar. Might try it again and add some flour and nuts to the topping. Serve it with some fruit on top as a breakfast pastry type item??? I was on the fence with this one.

Molten Chocolate Cakes With Sugar-Coated Raspberries

OMG, so good they are evil! I cooked mine in brule cups. Don't have giant muffin tins. I brushed each one with butter and rolled some sugar around in them. Made a nice carmelized crunchiness. Not sure if that is a word.Dang these were just sinful.

To Die For Blueberry Muffins

These muffins have great flavor. The only thing I did not enjoy with this recipe was that the oil seemed to puddle at the bottom of the muffins. Kind of grossed me out but the taste was super good. I made these a second time and reduced the vegtable oil to 1/4 cup and the greasy bottoms were gone. The muffins also baked up nicer and were not flat looking.I also reduced the amount of flour (2 TBSP)in the crumb topping and replaced it with oatmeal. I think the next time I will also reduced the sugar in the muffins as well like others have suggested. They are a little too sweet. Without any changes these muffins are great. I just like to tweak things to make them a little more calorie and health friendly.

Pan Seared Scallops with Pepper and Onions in Anchovy Oil

We loved this dish. I also cooked the vegies first. It is very important not to over cook the scallops. They only need to be seared 3 to 4 minutes. Lovely flavors in he recipe. Thanks so much for sharing.
