Special Pork Tenderloin
This was awesome! I made it as written and the only thing I would change is to add more ginger. Really moist and flavorful. My six-year old son even said, "This is the best pork I've ever had!" Don't hear that very often! Try it - it's a good recipe.

Caramel Fudge Cheesecake
This is a great cheesecake recipe - it tastes wonderful and I LOVE the cheesecake part. The only change that I've made is that I used a smaller brownie package rather than the larger one suggested by the recipe. However I gave it only 3 stars because of how difficult it can be to get out of the pan! I've made it 3 times and it's difficult! I finally had a flash of brilliance though and will line the sides of the pan with parchment paper the next time I make it.

Apple Carrot Muffins
I tried this recipe specifically for my son's kindergarten class on his "helper day". It was VERY well-received. I made a couple of changes. Instead of all AP flour, I used 1/4 cup ground flax seed, 1/2 cup whole wheat flour, and 1/2 cup AP. I also didn't have canola oil and used vegetable instead - still came out great. I grated the carrots and shredded the apple to disguise the healthy ingredients even more and because we're talking about 5 year-olds here, I put some cream cheese frosting on top and told the teacher to say they were apple raisin cupcakes! As I said, they went over quite well and my husband, who hates raisins, even ate them! Oh and one other thing - I accidentally bought raisin bran crunch cereal and it was still great (got a little oats in there too!).
