Old Fashioned Coconut Cream Pie

Reviewed: May 11, 2009
I would encourage anyone to make this as written (be sure to keep stirring until thickened, like pudding. The recipe is not clear on this).Although we really liked this pie (hubby says you could go into business with this recipe), I felt that the filling did not have enough coconut flavor, and I was looking for a lighter consistency. I am going to try the suggestions of coconut milk and cornstarch instead of flour. But really, you can't go wrong with this pie. It's simple to make and people will think you are a great baker.

Shrimp Fettucine Alfredo

Reviewed: May 11, 2009
My family loved this, but I don't think there is enough sauce for 1 pound of pasta. This is a great company dish! So easy too. Next time I will increase the sauce by about 50%

There are never enough vegetable recipes, so it's always great when you find a good one. Thanks for sending this in- whole family loved it.

Manicotti Alla Romana

Reviewed: Mar. 4, 2009
The directions say nothing about adding salt to the dish other than salting the pasta water, which other recipes for pasta call for. So, I think the criticism of too much salt is not warranted. This was very good but time consuming. The two sauces make it very rich so I would make this only for a party.

Chorizo and Lentil Stew

I used more liquid than called for (used chicken broth rather than water); also I added some chopped carrots and spinach. I used Portuguese chourico sausage sliced, not bulk. Very good- will make again

Original Nestle® Toll House Chocolate Chip Cookies

Reviewed: Dec. 31, 2008
I grew up near the Toll House in Whitman , MA and have Ruth Wakefield's original recipe. It calls for butter, not shortening as one reviewer said. This recipe is almost identical, but Mrs. Wakefield dissolved the soda in 1 tsp hot water. Also, the Toll House always chilled the dough overnight to prevent the cookies from spreading too much. This recipe is my favorite choc chip recipe.

Chicken Alfredo with Fettuccini Noodles

Reviewed: Nov. 4, 2008
I used prepared (cooked) chicken from the supermarket as a shortcut but otherwise followed exactly. I did not feel it had a grainy texture as some said, but I used freshly grated cheese not the dried stuff on the store shelves . My husband loved this. I thought the Ricotta was a great idea and not overpowering at all. So easy too- definately will make again

Addictive Sweet Potato Burritos

Reviewed: Aug. 25, 2008
I had high hopes for this considering the unique ingredients. I used canned yams (rinsed to get rid of syrup) and took the tip to mash beans before going into pan. The bean mixture was so watery from 2 cups of water so I added the sweet potatoes to it. (the recipe is not clear). This was a lot of effort without much payback of results. Not planning to make again.

Tomato Chicken Parmesan

Really good. I used very thin chicken breasts (like veal cutlets) to reduce cooking time. Will become a favorite.

Fish Chowder

Reviewed: Aug. 5, 2008
I'm from the New England coast- this was very, very good. Quick to prepare, tastes like you worked very hard. I left out the mushrooms- didn't feel they were authentic. I don't understand the reviews where people complained about the taste of evaporated milk in the recipe. Sometimes people confuse condensed milk with evaporated... will make this again and again.

Vegetarian Moussaka

I love the idea of lentils in this recipe. This recipe was time consuming, and I felt it could use more seasoning, but my husband and daughter declared it a winner. So, I will make it again if they ask.

Couscous with Mushrooms and Sun-Dried Tomatoes

Reviewed: Jul. 9, 2008
I used the sundried tomatoes packed in olive oil and herbs (more flavor) and skipped the soaking step. I added some feta cheese that I had on hand. Omitted the cilantro because I didn't have any and I didn't miss it. Very nice vegetarian dish and surprisingly filling.

I didn't warm the tortillas. Although they cracked as I rolled, it's all mended when they bake in sauce. This is very original. It make too much filling though!

This is very good, but I feel spaghetti sauce masks the flavor of the roasted vegetables. I prefer another recipe from this website: "Greek pasta salad with roasted vegetables and feta".

Lasagna Alfredo Roll Ups

Reviewed: Apr. 29, 2008
My whole family enjoyed this; it makes a nice presentation as well. The only downside is commercially prepared Alfredo sauce tends to be a bit salty. I used the refrigerated kind- I think it is better than the ones in shelf-stable jars (but more expensive). I definately will make this again.
