Pasta with Roasted Butternut Squash and Sage

I used Itialian sweet sausage for a little more flavor. I also used pre cut squash. I roasted garlic with the squash and onion rather than adding raw garlic at the end. Some in my family don't like balsamic so I left it out. I topped with freshly grated parmesan. I didn't bother to put the pasta in the skillet; I just added the squash mixture to the pasta in the serving dish. Don't "cube" squash too small and don't overcook. I doubled the recipe and will make again. A meal in itself!

Broccoli Cheese Soup VI

We loved the taste and it's so easy. It was a little watery- I might add less water next time. I doubled the cheese, added a little more onion. Also, I added a couple of drops of Tabasco.

Peach-a-Berry Pie

Everyone loved this pie. I made it for Thanksgiving with frozen fruit, since peaches and raspberries are out of season here. Instead of making vents, I used a cookie cutter to cut out a shape (I used a star) in the center of the top crust before placing it on the pie. I thawed the raspberries in a colander for 1/2 hour as the package recommended. The peaches did not need to per thawed per package instructions. I had no problems with a runny pie at all. I baked it on the lowest rack, on a preheated cookie sheet, as America's Test Kitchens recommends.

Gnocchi and Sausage Bake

For ease of preparation and a comfort food feel while using just a few ingredients, I'm giving it 5 stars. I found a whole wheat gnocchi with sweet potato from Italy in my supermarket. In the casserole it tasted just like the standard gnocchi made with white potatoes. Great for an easy weekday meal and I served with salad.

Chicken Potato Bake

This was blissfully easy and the potatoes were perfect. My family liked it, but surprisingly I found it a bit bland. It could be the Italian Dressing I used that doesn't have a lot of pizzazz. I thought the 1 tbsp of seasoning was going to be enough. I will try a livlier dressing next time

Moroccan Tagine

I thought this was really good and healthy too. My husband liked it a lot; my young adult daughter not as much. I had no problems with the liquid drying out and it was great over couscous. I don't understand the "blandness" problems - it calls for cayenne pepper, coriander and garlic. You could up the cayenne pepper if you desire.

Horseradish and Yogurt Crusted Salmon

Very easy and the salmon was quite moist. I did have to cook a bit longer than stated though. No one else in the family seemed impressed though (sigh) so I am not sure I will make again.

Chicken Pesto a la Lisa

My husband thought this was great; the rest of us thought only "good". The chicken broth seemed to overpower the dish and I couldn't taste the feta . I liked the ease of preparation and cooking method though. I did leave out the pine nuts to spare both the expense and the time to toast them. I think I would try adding next time. I might replace some of the chicken broth with white wine.

Spinach Tomato Tortellini

We really liked this and it was easy. I scaled the recipe up for my family. Some may prefer a little more parmesan or spinach. I really recommend this for a beginning cook. It's so easy and it looks like it was more work; close to "restaurant quality" too

Tofu Parmigiana

Loved this! Next time I plan to double the recipe and use a larger pan. In this case I will bake the tofu slices in the oven as I would have otherwise to do multiple bathches in a skillet.

This was very good. Next time I may add some mushrooms. Maybe reduce the cream cheese and add more milk. I didn't find it dry. I wonder if the people who said so had not covered it.

Oregon Salmon Patties

The taste is 5 stars but I am a little on the fence with that because I had to add a lot more cracker crumbs for these to hold a shape. These are the best salmon patties I've ever made. My family said they taste like crab cakes from a high end restaurant. I used boneless and skinless canned salmon. I needed a second skillet as I couldn't fit 6 in one.

Spaghetti Sauce with Cauliflower

This was very difficult to rate. For creativity, definitely 5 stars. We all liked it and it is healthy too. But I don't think you can confuse it with a meat sauce. One reviewer suggested adding tomato paste and more seasoning. I would agree with that. Only giving 3 stars but maybe it should be 3.5 or 3.75. I would make it again.

Hot and Tangy Broccoli Beef

This was really excellent as written. I've made some other beef and broccoli recipes on this site but I like this one the best. Next time I may add some more vinegar; perhaps some mushrooms, carrots and baby corn. I don't think it's bland, but some may prefer more heat. I like it as is.

Zippy Shrimp Linguine

A pretty and healthy dish. My husband really liked it. To save some work, I used frozen cooked shrimp with the tails already off. The shrimp is probably a little smaller than shown in the picture , but it is tasty. I chopped the veggies before I did anything so I didn't feel rushed to put it all together at once.

Stuffed Eggplant with Shrimp and Basil

This is a meal in itself. I don't think it needs sides of orzo and salad. I served with tomatoes from our garden. This was good, but not as good as I hoped. I added salt and pepper as written, but with the 'Italian" seasoned bread crumbs and parmesan the end result was too salty for me. Next time I might experment by reducing the breadcrumbs and adding mushrooms and onion. I could not taste the basil at all. The seasoned breadcrumbs overpowered the dish.

Greek Honey Cake

Some of the reviews ridiculously subtracted points for not being a "substitute for baklava". It's not intended to be and the submitter never said that it was. Those that use whole wheat flour in this recipe should expect different results.
