About this Cook
I have developed a passion for cooking that I thought I would never have. Growing up in a large family you would think I would have helped with the cooking but I didn't. It wasn't until my kids were grown and gone that I, in a quest for healthy eating, started to experiment with new and different dishes. I'm no Rachel Ray but I do enjoy any reason to try out a new recipe and my husband loves it.
My favorite things to cook
Talipia, Salmon, Chicken, bar b que brisket, anything mexican, Casseroles and Fish
My favorite family cooking traditions
Coming from a very large family of eight children we ate a lot of casseroles and leftovers. Since I try to eat healthier we limit our "casserole" type dishes to only occasionally. My mother made some pretty awesome baked beans which I wish I had the recipe for today. She also used to make nine loaves of homemade bread every week that was to die for.
My cooking triumphs
Spinach stuffed salmon, Broiled Talipia Parmesan, Shrimp Scampi Adobo, Shrimp Linguini and Chicken Asaparagus crepes
My cooking tragedies
Too many to mention but I do remember making some awful home made bread that you never knew from batch to batch if it would rise or not. It ended up being about three inches high and weighing a ton!

Baked Fennel with Parmesan
This was my first attempt at cooking with fennel and what a great recipe to start with. I didn't have any creme fraiche so I added a little sour cream and it was still great!

Country White Bread
What a great bread receipe and it was so easy as well. Once it doubled in size I split it in two and then I added italian seasonsing to one loaf, kneaded it in and baked it in a 1 qt. greased cassarole dish. It was wonderful! Now I have Italian Country Bread and White Country Bread. The only thing missing was the nutritional information.

Mid-Summer Italian Bread Salad
I have made this several times but I use lettus with just a bit of the basil. For me the basil would be too much so I add it to lettus and we eat this several times during the summer.
