Carrot Cake III
I made all the alterations to the recipe suggested by gneebeanie (Dec. 8, 2006). Draining the unsweetened, crushed pineapple, I soaked 1 cup of raisins in the juice then drained them before adding. I also reduced the nuts to 1/2 cup, using walnuts. The cake is so flavorful, the next time around, I'm going to replace the 1 cup of granulated sugar with 1 cup of Splenda to help reduce calories. With all the alterations, in the end, it's an entirely different recipe but a gourmet treat.

Corned Beef and Cabbage II
I was dismayed to learn the fruit I bought for this recipe was consumed by a household member as a lunch, so had to do without! Even without the citrus, the corned beef was very good. I cut up Yukon Gold potatoes and added them to the bag to roast in the oven and be flavored by the meat. Yum. Instead of using 1/4 c. water to steam the cabbage, I used 1/4 c. vegetable broth to add flavor since I was apple-less!

French Breakfast Puffs
I've made this recipe several times since discovering it! I followed the advice of other reviewers to skip the butter bath and just sprinkle cinnamon over the tops before baking. I also double the amount of nutmeg because I enjoy that flavor. The recipe is quick and easy. The ingredients are always on hand. They make a great Sunday breakfast with a bit of jam or apple butter. This recipe has a permanent place on my "regulars" list!
