About this Cook
Married, no kids . . . in school to become an Registered Nurse. Have extra time to try new recipes this summer while on summer break.
My favorite things to cook
I love grilling and getting that perfect pink center on a steak or a perfectly juicy chicken breast. My husband loves when I make spaghetti and meatballs - lots of garlic for him!
My cooking triumphs
Since our move to California about 5 years ago, I have taken over Thanksgiving dinner from my mother-in-law. The in-laws travel out from Chicago to visit sunny Southern California every year for the holiday. I have to say, that first year was such a thrill to put out a huge spread of food for the holiday, and have my mother-in-law begging for the recipes. Definite ego booster!
My cooking tragedies
Cookies are tragic in my house - I had to give up the attempt at the basic choc-chip cookie after my previous attempts turn into one big sheet of cookie surprise. I leave the baking to the professionals.

Seared Ahi Tuna with Watercress, Chile, and Ginger Salad
The flavor is there, but the directions were incomplete . . . missing steps for including the ginger, so I added it after the fact to the marinade, dressing & on the salad itself. There was no quantity listed for the olive oil, so I think my guess of 3/4 cup was too much. I will try it again because the tuna turned out really good and flavorful.

Grilled Potatoes and Mushrooms
Terrible all around - taste, appearance and time in cooking. Followed the recipe exactly, and it came out looking like a pastey goulash of sorts. I don't even see how to improve it or change it to more our liking. Would not make ever again and would not recommend.

Lasagna Spirals
This was fun & pretty easy to make compared to traditional lasagna. I really was attracted to the spiral idea. I used spinach & mushrooms instead of broccoli and added a bit of pepper to the cheese mix for a little zing. Husband loved it! Enough for leftovers and going to try and freeze some for a quick meal in the future.
