Roast Chicken with Rosemary
EXCELLENT!!! I also rubbed butter, garlic and rosemary under the chicken skin and basted with 1/2 c. chicken broth. I also arranged vegetables (carrots, celery, red potatoes) around chicken and trussed with butcher's twine prior to roasting. I cooked 2 chickens and used the 2nd to make "Hearty Turkey Soup with Parsley Dumplings--submitted by Christin L." This was an excellent use of the dish for a second meal! This is FABULOUS!!!!
