Faken (Veggie Bacon)

It did not resemble bacon in any way but was good nonetheless. I used fresh regular extra firm tofu cause I couldn't find frozen smoked and sorghum instead of maple syrup which is too sweet. Also thought the name of the recipe quite cute, but I don't get why vegetarians try to "pretend" to be meat-eaters or look for substitutes.

Pasta with Roasted Butternut Squash and Sage

I left out the meat & used steamed summer squash. I used whole milk instead of cream. I served it cold the next day. The flavors had time to blend in the frig. A lovely light lunch fare with nice delicate flavors. Will make again.

Jamie's Cranberry Spinach Salad

I contributed this toward the family Christmas dinner expecting it to go untouched amidst all the starch and gravy and gooeys. Instead it was devoured and my sister-in-law asked for the recipe.

Down Home Casserole

I make this at least once a month. It's delicious, super fast, and adapts well to almost any combo of vegetables on hand. Don't skip the sausage-on-top step -- it's the key.

Spinach and Mushroom Quesadillas

Instead of spinach I used fresh swiss chard from the garden. I steamed/sauteed it with the mushrooms and garlic then drained mixture in a colander to remove excess liquid. Hubby the Hungry Carnivore gobbled up 3 of them standing at the kitchen counter!
