Pumpkin Chocolate Chip Muffins
Very nice. I cut the sugar down to 1 1/2 cups, used whole wheat flour, 2 cup fresh steamed pumpkin, 4 eggs and added about 1/2 c oat bran and 1/4 c. ground flax. Came out nice and fluffy. Thanks!

Sam's Famous Carrot Cake
Except for omitting the raisins and coconut (just preference), I followed the recipe exactly and got rave reviews. My brother in law actually didn't believe I made it : ) Iced it with 16 oz cream cheese, 1/2 c butter, 3 c icing sugar and 1 tsp vanilla. Fantastic.

Italian Spaghetti Sauce with Meatballs
This was very good, but a little too salty. Next time I'll use unsalted tomatoes or cut the salt in half. I followed the recipe exactly, except I made mini meatballs instead of 12 big ones.
