Caramel Apple Dip

Mmm...I could eat this all day! I used an entire bag of caramels. I thought it might be too sweet with the caramels and the brown sugar, but the cream cheese balances it out perfectly, plus it keeps for days in the refrigerator.

Yummy Honey Chicken Kabobs

Everyone is always quite pleased with these. I use orange bell peppers, zucchini, yellow squash, cherry tomatoes, pineapple, and cremini mushrooms on the skewers as well.

Vegetarian Gravy

I used 1/4 cup unsalted butter instead of vegetable oil and also less soy sauce. I never would have imagined that the nutritional yeast (I used Marmite brand) and soy sauce combination would make such good gravy. All vegetarians at my Thanksgiving dinner were excited to have gravy, so thanks for posting!

Best Black Beans

Surprisingly good. I didn't have a small onion on hand so I used 3 chopped green onions and it seemed to work well. I didn't drain or rinse the beans, either, so I'll see you in bed tonight, my friend.

Black Bean and Corn Quesadillas

We enjoyed this a lot. I added some chopped red bell pepper, a clove of garlic, and some cumin to the bean mixture, and used jalapeno jack instead of monterey jack for some extra spice. Great!

White Chocolate Raspberry Cheesecake

This was incredible. I used Nabisco Famous Wafers for the crust rather than Oreos. Also, I recommend using a high-quality white chocolate such as Callebaut instead of regular chips for this because it will give a much stronger white chocolate flavor. I doubled the raspberry sauce, too. Amazing.

Awesome. Oddly, I tried several variations and actually liked the traditional apricot, raisin and walnut combination the best, even though I don't particularly like raisins, apricots or walnuts. The pastry was incredible.

Cappuccino Bon-Bons

Really good. Instead of dusting with confectioners' sugar, I used a coffee icing of 1/8 teaspoon instant coffee crystals, 1 cup powdered sugar, and enough whipping cream to make an icing consistency.

Hearty Vegetable Soup

This recipe is a great starting point for anything you want to throw in. I added sweet potato and green beans and used frozen peas instead of canned. I was unsure about the soy sauce and dill, so I used parsley and italian seasoning instead...using V8 as a base was easy and tasty! I also omitted the rice, I thought the soup was hearty enough without it, and lower calorie too.

Actually Delicious Turkey Burgers

I made these for my family (I didn't eat any because I'm a vegetarian), but everyone else had at least two apiece. I used extra-lean ground turkey and added some cayenne pepper for heat. I was told they were excellent!

Chantal's New York Cheesecake

In a word, wow. I only used 3 T. of flour, and substituted Bailey's for the milk. I would suggest adding the flour with the sugar, it's hard to make it smooth if you add it with the vanilla otherwise. I topped it with caramel sauce, hot fudge and pecan halves for a turtle-type cake and it was amazing.

Two Ingredient Pumpkin Cake

I loved this cake. I didn't change a thing, didn't add a thing and it turned out very moist and tasty - I didn't even add frosting. Best of all, it's low-fat, low-calorie, vegetarian-friendly and just really really good. I've heard this works well with chocolate cake mix, too...I'll have to try it.

Dad's Cookies

My dad recently had heart surgery, so I was thrilled to find a cookie recipe that called for oil instead of solid fats. I used canola oil, omitted the coconut, threw in an extra handful of oats, and added some Hershey's Special Dark chips for a heart-healthy cookie that everybody really liked. Bread Pudding II

This is was so good! I used Pepperidge Farm brown sugar swirl bread (I ended up using about 9 slices), used only 3 eggs, subbed cream for milk, and topped it with a vanilla sauce (1/2 C. cream, 1C. sugar, 1 stick butter, 1 tsp. vanilla brought to a simmer for about 5 minutes). My mom said it rivaled the bread puddings she's had in New Orleans.

Can't Tell They're Low-fat Brownies

I made these for my dad who recently had a triple-bypass and needs to watch his fat intake. He loved them because he hadn't had sweets in a while, but I think next time I will use applesauce or mashed bananas in place of the prunes....to me, they tasted like a giant squishy raisin.

Whole Wheat Pasta

If you have a stand mixer with a dough hook and a pasta roller machine, then by all means, try this pasta! The taste is excellent. If you don't, then brace yourself for some sore arms and a stiff back....this dough is brutal!
