I thought these muffins were good. My kids didn't like them but they are picky. I also cut this recipe by 1/3 and added 1/4 C applesauce since other reviewers said theirs were dry. I still got 28 mini muffins and they turned out great.

These were very tasty and easy to make. I also baked them as other reviewers suggested and they came out somewhat crispy. In my opinion deep fried would be best. I also ommited the spinach and served with a spicy southwestern ranch dip. Thanks I will definately make again.
