Oatmeal Blueberry Muffins
Could these be any more easy? I did some slight modifications that others suggested - added tsp of vanilla and some generous shakes of cinnamon. I also substituted about 1/4 cup flax meal for some of the oats/flour, for some extra nutrition. My 4 and 6 year olds love these and do I! I made mini-muffins, cooked them for about 14-16 minutes at slightly less heat, about 415 degrees.

George's Chocolate Chip Cookies
These came out great! Halved the recipe. Just used some milk choc chips and some semisweet. Baked for 9 mins. I think I would give 5 stars if they had a teeny crunch to them or something - but they are really good as is, soft and almost fluffy. I used a bit less sugar than it called for, the flavor is yummy.

Easy Smoked Salmon Pasta
We really liked this! Needed something to use up my lox, this was easy and delicious. Doubled the sauce as others suggested. I used spaghetti, I had onion on hand, not shallot, and I added some tomato pieces. Came out great.
