Broiled Tilapia Parmesan
This was delicious. I had inadvertantly mixed some crumbled gorgonzola in - it was in with my parmesan from a previous recipe. There probably wasn't much in there but it's so strong, and it tasted great. I also added a few tablespoons of breadcrumbs as someone suggested. I cut back on the butter and substituted some olive oil. The topping was slightly crispy and went beautifully with the fish.

Black Bean and Salsa Soup
I followed others and started by sauteing onions and garlic. I also added carrots. After 10 minutes, I added two cups of stock (I used chicken because it was on hand), brought it to a boil, and simmered it covered about 15 mins to soften the carrots. Then I added 3 cans of beans, salsa, cumin and hot sauce and pureed it all in the pot using my handheld. Delicious!

Spicy Grilled Shrimp
Delicious and simple. I also reduced the Kosher salt to one tsp, and substituted Chili powder for Cayenne. I grilled it on a counter-top Cuisinart grill and everyone loved it.
