Cornish Game Hens with Rice Stuffing
Very simple and very flavorful! I should have cooked it less as mine was a little dry (I only baked one bird), but overall really great flavor. I sauteed onions first, then deglazed with wine, sauteed the rice, then cooked the rice in chicken stock.

Irish Soda Bread
The last time I attempted Irish Soda Bread it came out like a gigantic biscuit, so my husband was scared that I was trying it again. We were both pleasantly surprised at how delicious this recipe was. I didn't have a 9 inch baking dish, so just put it in a 9x13 pan after shaping it into a ball. I was afraid it would spread too much, but it was actually perfect. Love, love, love this....can't wait to try it again. Incidentally, I thought I had caraway seeds, so didn't buy any at the store, but it turns out I didn't have any. Next time I will definitely try the caraway seeds. I also only used 2 cups of raisins.

Cucumber-Mango Salsa
I served this over tilapia (baked both in the oven in foil)....SUPER yummy.
