Zucchini Brownies

Loved this recipe! I grated the zucchini (1 medium one yields 2 cups) on the smaller grate and although it doesn't look like much in the bowl (quantity-wise) it's quite ample for a 9x13 and will rise. Not as dense as a brownie, more like a very moist cake. Very chocolatey and just plain good!

I found the vinegar way too over powering - I'd start with 1/2 the amount next time and add if needed (I won't be making this again but that's my advice to someone trying it for the first time).

No Cook Icing

I just made this icing and it turned out beautifully! I'm not sure if it matters or not but I had my ingredients (egg white) at room temperature (I put all the ingredients except water in a bowl while the cake was baking and cooling). I added a pinch of salt to the dry ingredients (1/8 tsp?), mixed the ingredients and then added the boiling water. I found it took about 5-6 minutes on medium / med-high speed (I started on medium for a few minutes and finished on med-high).

Chocolate Covered Cherries

A great recipe and I made them twice over the Christmas holiday's. Lots of work but yummy. I dipped mine in milk chocolate and then once they hardened, white chocolate. I found them at their best at 7 - 10 days but the filling started to get grainy after that (by 14 days).

I think the orange completely overpowered the cake. Next time I'd leave the orange out entirely - a cranberry cake with a cream cheese frosting.

Kentucky Butter Cake

A great cake! It's simplistic yet delicious. The texture and moistness improves the next day so I always make it the night before. I pour 1 tablespoon of vinegar into a one-cup measure and fill the rest with milk in place of the buttermilk.

Extreme Chocolate Cake

I LOVED this cake! I made it in 3-9" cake pans and had to add a couple of extra tblsp's of milk to the frosting but it was excellent! I may try spreading smooth peanut butter over the middle layers of frosting next time, just because I love chocolate and PB! This will definitely be my go-to recipe for chocolate cake!

Million Dollar Fudge

I don't typically like chocolate fudge but loved this! I made two batches, one as written and the second using Hersey's special dark chocolate chips in place of the German chocolate and omitting the nuts. I prefered it without the nuts and the chips version was just as good. I cooked the recipe on the second lowest setting on my stovetop for about 10 - 15 minutes, bringing it to a rolling boil. I had the Fluff and chocolate ready in my Kitchen Aid mixer, added the hot syrup and mixed on the lowest setting until well blended. This fudge is so creamy and tasty, it turned out perfect both times and will be a new addition to my recipe collection.

Chinese Pasta Salad

I make a similar version to this but with 1 pkg ramen noodle seasoning, 1/3 c oil, 1 T soy sauce, 1 T sugar and 1 T of vinegar (no herbs) and this makes for a sweeter dressing. I also use a bag or two of coleslaw mix instead of shredded cabbage for an easier recipe(depending on how much you want to make but match the number of ramen noodle packages to coleslaw packages).

Delicious Ham and Potato Soup

Loved this soup! It almost tasted like a ham and scalloped potato chowder if there was such a thing. I used cream, whole wheat flour in place of the milk / flour and added cooked bacon, diced carrots and frozen peas in addition to what was called for in the recipe - it was fabulous. Such a comforting dish in the winter.

Cucumber Sandwich

Mix dried or fresh dill with the cream cheese for extra flavor and add any veggies you want to the sandwich (cucumber, red onion, shredded carrot, lettuce, tomato, etc).
