Million Dollar Fudge

I don't typically like chocolate fudge but loved this! I made two batches, one as written and the second using Hersey's special dark chocolate chips in place of the German chocolate and omitting the nuts. I prefered it without the nuts and the chips version was just as good. I cooked the recipe on the second lowest setting on my stovetop for about 10 - 15 minutes, bringing it to a rolling boil. I had the Fluff and chocolate ready in my Kitchen Aid mixer, added the hot syrup and mixed on the lowest setting until well blended. This fudge is so creamy and tasty, it turned out perfect both times and will be a new addition to my recipe collection.

Chinese Pasta Salad

I make a similar version to this but with 1 pkg ramen noodle seasoning, 1/3 c oil, 1 T soy sauce, 1 T sugar and 1 T of vinegar (no herbs) and this makes for a sweeter dressing. I also use a bag or two of coleslaw mix instead of shredded cabbage for an easier recipe(depending on how much you want to make but match the number of ramen noodle packages to coleslaw packages).

Delicious Ham and Potato Soup

Loved this soup! It almost tasted like a ham and scalloped potato chowder if there was such a thing. I used cream, whole wheat flour in place of the milk / flour and added cooked bacon, diced carrots and frozen peas in addition to what was called for in the recipe - it was fabulous. Such a comforting dish in the winter.

Cucumber Sandwich

Mix dried or fresh dill with the cream cheese for extra flavor and add any veggies you want to the sandwich (cucumber, red onion, shredded carrot, lettuce, tomato, etc).

Country White Bread

My first time making bread from scratch and it was a success! The recipe / dough was simple and easy to work with. It took about 1 1/2 hours for the dough to rise the first time (so don't loose faith if yours hasn't doubled in the one hour, and when baking, I would probably check it after 20 minutes next time as I like my bread a light golden brown instead of a darker brown (25 minutes). I brushed the tops with butter (with wax paper) when I took them out of the oven to give them a sheen and soften the crust. This was a dense bread of substance yet had a nice soft texture. A winner.

Fruit Salsa

Everyone LOVED this salsa! I halved the cilantro, cut back a bit on the onion and added an extra tomato and also mango to make it go a little further (to keep up with the demand!). This recipe sounds like an odd combination of flavours but it works!

Fresh Rhubarb Pie

This is the first time I made a 'real' pie with a homemade pie crust. I followed the instructions which worked out well but I like my rhubarb sweet so I upped the amount of sugar to 1 1/2 cups. I used a deep dish pie plate and the filling didn't boil out of the crust, I also wrapped the edges in foil until the last 15 minutes to prevent burning. Cooled it to room temp then refridgerated it and it set perfectly. This pie was beautiful and delicious! It's a keeper.

White Chocolate Macadamia Nut Cookies IV

Love, love, LOVE this recipe! Like others I used 1/2 c chopped macadamia nuts and about 1 c of chocolate chips. Bake them until just lightly browned around the edges, remove from oven, cool for a few minutes on the pan as stated in the recipe then transfer to wire rack. I agree that they're better the next day, the sweetness is more pronounced. A new keeper!

MMMMM... Brownies

So delicous! Like others mine 'fell' in the middle but they still tasted great. I added 1/3 C of walnuts and 1/2 C of milk chocolate chips and frosted with chocolate frosting. Needless to say, they were rich but heavenly! The nice crisp crust keeps the brownies moist - love this recipe!

Cake Balls

Great idea and recipe. I've made these twice, once with a white cake mix and pistacho (sp?) pudding for a green cake and white coating, the next with cherry chip cake, white frosting, mini chocolate chips and white coating. I found that when I left the crust from the cake out of the cake ball mixture (so you didn't have the brown bits in it), you had to decrease your frosting, otherwise you didn't have the same cake like consistency. Love the idea and will be making again.

Mom's Island Treasures

These are a five-star for a reason - a definite keeper! I increased the coconut to 1.5 cups and only used 3/4 c of butter. EXCELLENT and addictive cookies, so wholesome, comforting and truly homemade. I love finding a 'winner' like this!

Mocha Chocolate Chip Banana Muffins

I didn't have any instant coffee so skipped the 'mocha' flavor in this recipe. LOVED the ch'late chip banana muffins this produced. Like others, increased the bananas and used a combination of brown / white sugars. A co-worker said it was all he could do to restrain himself from eating each and every one of them! I used semi-sweet chips & chunks but this would also be heavenly with milk chips.

Big Soft Ginger Cookies

LOVED this cookied, substituted the OJ for water (which you can't taste) and they turned out perfect. Everyone loved them. A great old fashion cookie that brings you right back to childhood. Thanks for sharing

BBQ Pork for Sandwiches

I put the meat on the bottom portion of a kaiser roll, topped it with shredded cheddar cheese, and placed that and the buttered top (sprinkled with a little garlic powder) under the broiler in a toaster oven for a few minutes. Excellent recipe, thanks for sharing it, I will be making it for many years to come!

Fourteen Carat Cake

I love this recipe! I made it for a cake raffle at work and after the person who won it shared it, all you could hear was moans of pleasure coming from the kitchen! One person said they always order carrot cake in restaurants and this was by far superior. I added 1 tsp of vanilla to the batter and made it into a four layer cake (two 9" pans and then cut each cake into two) with cream cheese icing between each layer (double a regular c.c. icing recipe). Thank you SO much for sharing this recipe. I've made it three times in the last two weeks(twice as a layer cake and once as cupcakes) and will be making it for many years to come!

Belles Hamburger Buns

I wish I could agree with everyone else on this recipe but based on my results, I can not. I found the buns heavy and tough. I used a breadmaker to mix the dough and also let it rise in it so that may have been the problem. I would suggest that when you go to press the balls down that you keep in mind (again, from my experience) that the dough will not expand much but will rise, so make sure you flatten them well.

Ribboned Fudge Cake

Taco Salad I

I make this same recipe but I don't cook the dressing in the hamburger mixture and I omit the chili beans. I mix everything up (hamburger cooled) and pour the dressing over the salad fixings and combine - I also use crushed nacho cheese Dorito's instead of tortilla chips.

No Roll Pie Crust I

I don't have that 'light touch' needed for traditional pie crusts so this was a perfect fit for me! I put it between two pieces of waxed paper to spread it enough to top a chicken pot pie. This recipe nice surprise.

Chocolate Covered Potato Chips

I really liked the idea around this recipe - I've always loved chocolate and chips so this was a perfect union in my eyes! The only change I made was adding a little parawax to the chocolate so it wasn't so thick - it was easier to work with this way.
