About this Cook
When I got married I had absolutely no idea how to cook anything except macaroni & cheese (from a box) and ramen noodle soup! I've come a long way since then! I serve meals to 3 hungry, growing boys (twins & a younger brother) and my husband each day. They are all the most unpicky eaters in the world - the kids love spicy food and couldn't stop complimenting a meal I made with spinach. Anything I make, they eat, and usually have seconds.
My favorite things to cook
I love cooking things that don't trap me in the kitchen for too long. I'm a busy mom & don't have time to sit in one place for too long. I'm trying to use my crock pot more often because I work all day & the drive the kids to sporting events in the evening. I'm always looking for ways to put new spins on casserole recipes (they always seem the cheap & easy way to cook).
My favorite family cooking traditions
Although my grandmothers were great cooks & bakers, it doesn't seem that anyone else in my family cooks or bakes much. For holidays, my family suggests picking up store bought pies & such because they know I won't settle for store-bought food on a holiday (especially pies)! I enjoy cooking for others and enjoy having someone sit in the kitchen with me while I cook - not helping me, just someone to chat & drink wine with!

Sex on the Beach III
Awesome recipe as-is. Also played with it and made it with Citrus Vodka - YUM! Also used less Cranberry Juice...still YUM! Super easy to make individually or for a crowd :)

Speedy Chicken Enchiladas
Fast, easy, & delicious. My kids asked if I would make it again tomorrow. I made a few slight variations to the recipe - I used shredded cheese instead of the cheddar cheese soup (since I didn't have any in my cupboard), I used bean & corn salsa instead of the Thick & Chunky, and baked it at 350 for 15 min instead of microwaving (gave me time to clean up the kitchen). I also sprinkled a little garlic & herb seasoning on the chicken while cooking it. I ended up getting more than 8 enchiladas...which worked well for us! You could easily use any leftover chicken/rotisserie chicken to make this too.
