Chicken Gruyere with Sauteed Mushrooms
This was delicious! The gruyere melts beautifully, but its distinctive scent had my husband and son wondering what in the world it was! Hubs commmented that it tasted like something from a 5 star restaurant! I served it with Kashi pilaf that I cooked up with more mushrooms..it was delicious and very healthy!

Easiest Peanut Butter Fudge
My husband loves PB fudge, and has trouble finding kinds that taste peanut-buttery enough. This is awesome, great PB taste, wonderful texture. I used the 1 c PB, 2 c brown sugar 3 c pow sugar recommendations. For those who had trouble with butter floating to the top, or crumbly when mixing in the pow sugar, I think it's the cooking time. I timed it from the second I saw two bubbles break the surface, then exactly two minutes after I took it off the heat. After mixing in the powdered sugar it was still of pourable consistancy. It did look a bit shiny on top as it cooled ( COOL AT ROOM TEMPERATURE! ) but that went away when it cooled completely. Do not refrigerate the fudge!

Shortbread Cookies II
These are awesome cookies. I rolled the dough into two logs and cut into rounds to bake as another person mentioned, and they turned out awesome. The dough even freezes great, just let the dough thaw a bit before slicing. Oh and we added finely chopped pecans...they turned out like pecan sandies cookies! Thanks for the great recipe!!
