Delicious Cranberry Sauce
I just made this and I think it tastes great! I had to make an adjustment because I cannot have oranges or OJ. So I made it with a cup of water, added the zest of 2 small tangerines, and the juice of 2 tangerines. I probably should have used a little less than a cup of water, but there wasn't really much tangerine juice. The cinnamon I have is Saigon cinnamon, which is pretty strong, so the sauce is pretty "cinnamon-y." But I like it!

Red Bean Salad with Feta and Peppers
I used garbanzo beans, doubled the lemon juice and olive oil, and added ground black pepper. This salad is cool, crunchy and so tasty! I'll definitely make it again. I'm looking forward to eating the leftovers tomorrow.

Jim's Macaroni Salad
I made a few substitutions according to taste and what I had on hand: omitted the eggs, added a can of tuna, used green onions, sweet pickles and cubed Cheddar cheese. Also I didn't have cider vinegar so I used red wine vinegar. Although these seem like substantial changes, the salad was terrific and I bet it would be great as the recipe was written, too.
