Cherry-Raspberry Jam

Reviewed: Jul. 31, 2011
This jam is delicious! I did follow the directions in the pectin box. I only use MCP pectin and I have never had a batch of jam not turn out the way it should. I combined the cherries and raspberries. I added 1/2 teaspoon butter to prevent the jam from foaming and also added the pectin. I stirred to dissolved the pectin and brought the mixture to a full boil. I then added the sugar all at once and stirred to dissolve the sugar. I again brought the mixture to a full boil. I boiled for 2 minutes, poured into bottles and sealed. I got 3 pint jars. I processed for 10 minutes in a hot water bath.

Grandma's Hash Browns

Reviewed: Jul. 13, 2011
I've been trying for close to 20 years to make good hash browns. I didn't know the secret was to cook your potatoes first. No more bagged frozen hash browns for me. These were almost restaurant quality hash browns. I think my only mistake was not using enough oil for frying. Thank your for sharing Grandma's recipe.

Chicken Enchilada Soup III

Reviewed: Oct. 15, 2009
Overall it was a little bland for my taste. I served topped with sour cream, shredded cheese and crushed tortilla chips. My 4 year old asked me to always make it for her. She's gobbling it up now and just exclaimed, "It's all gone". Guess I'll get off the computer and refill her bowl. Thanks for sharing.

Pumpkin Fudge

Reviewed: Oct. 13, 2009
I'm not huge pumpkin fan but made this for my kids. It is wonderful. It literally melts in your mouth. I followed the directions exactly as written. I've never made fudge without a thermometer so I checked and it was registering 234 degrees at 17 minutes. I cooked for 18 and it set up wonderfully. Have a piece while still warm. You won't be disappointed. Thanks for sharing.

Cheeseburger Soup I

Reviewed: Feb. 19, 2009
The only change I made to this recipe was to omit the celery and sour cream and that was only because I was out of both. This is still on the stove with the cheese melting and I have to say it is wonderful. I will make again with the sour cream. How it can improve such a good soup, I can only imagine. Thanks for sharing.

Cowboy Skillet Casserole

Reviewed: Nov. 9, 2008
The printed date on the copy in my book of recipes reads 2005. I have been planning on making this for over 3 years now. I look at it quite often and finally got around to making tonight. It is really good. I added a can of corn to the mixture because I figured I had a better chance of getting the kids to eat "one thing." I also used the cornbread recipe from the red Better Homes and Garden cookbook because I like it better than the mix. I topped the cornbread mixture with cheese and it baked into the bread. I will make this again and won't wait three years this time. Thanks for posting.

The flavor was good. I let it marinate overnight. I added 1 teaspoon of cornstarch based on other reviews to thicken the sauce. I served with broccoli, rice, and hot soup.

Tortillas II

Reviewed: Oct. 6, 2008
I've tried a few different recipes for tortillas and I like these the best. They were light and fluffy and had good flavor. They were very soft and flexible. I used some suggestions by other reviewers and made sure I used the hottest water I could get out of my tap and I made sure I didn't cook them to long. Maybe only 30-35 seconds per side.

Sweet 'N' Sour Pork Chops

Reviewed: Jun. 16, 2008
I was hesitant to try this but the clock got away from me and I needed something quick. I figured I would like it and had a hot dog as a back up for the kids. I was shocked when my 6 year old who eats nothing but hot or corn dogs said this is good. I asked if he wanted sauce (he would have turned his nose up if I put it on top) and he said yes. He got a big smile and said, "Wow, it's even better." There wasn't a bit left on his plate. Thank you for a quick and easy meal my son will eat.

Bread Bowls

Reviewed: Mar. 17, 2008
This was really easy and simple to make. I took jms250's advice below and warmed my oven to 100 degrees, turned it off and let the bread rise in the oven. They held together nicely, were sweet, and went very well with Chili I in this site. I have found my perfect bread bowl recipe.
