French Onion Soup V

Reviewed: Nov. 4, 2008
My onion-hating husband and son both enjoyed this soup. I LOVED it! Sauted onions until carmelized (sp?) and omitted wine as I did not have any on hand. Next time will use wine, but probably red-definitely needs it. Will also chill and skim fat before re-heating as I found it really thick, fatty.

Best Chocolate Chip Cookies

Reviewed: Jun. 8, 2008
Baked these tonight for a late-nite, pregnant snack....really awesome! I only gave 4 stars as I think I'll cut the sugar back a bit next time....very sweet...they were, however, a perfect combo of crisp outside and soft inside...Beautiful! I substituted 1c flour for ww flour...and used a combo of milk chocolate/white chocolate/butterscotch chips as I did not have enough just chocolate......maybe this is why they were so sweet. I baked them on parchment.

Chicken Fried Chicken

Reviewed: Jun. 5, 2008
This was my first time frying chicken and it worked out pretty well. My family liked it but said it needed something...a kick. I needed to use 3 eggs, one was not enough. I think next time I'll try baking as I found the frying lengthy and tedious, also could not tell what the temp was at.

Buttermilk Coleslaw

Reviewed: Jun. 5, 2008
Entire family loved this coleslaw, and my son and husband generally don't like it....I doubled the salt and pepper, added some fresh minced garlic, dill, paprika and cayenne and omitted celery seed as I didn't have any. Was truly fantastic! Next time will add some hot sauce.

White Chocolate Macadamia Nut Cookies III

Reviewed: Jun. 4, 2008
This cookie was just ok... I think 10 minutes was too long to bake as they burned on the bottom...... Substitutions: I only had dark brown sugar(not light)...doubled vanilla as I did not have almond extract...and used 1/2 white and 1/2 whole wheat flour. I also used chips as I did not have a chunk of chocolate......Baked on parchment paper. Maybe my new oven runs hot?...........I tried a second batch and watched it closely about 8.5 minutes. They were much better asnd did not burn. Still not a 5 star in my opinion. Probably all the substitutions.

Chocolate Chip Banana Muffins

Reviewed: Jun. 3, 2008
I will never use another banana recipe again! This one has so much banana flavour! I used 1/2 white sugar and 1/2 brown...1/2 white flour and 1/2 whole wheat...used butter instead of oil, sour cream instead of yogurt as I had none and added raisins and walnuts to 1/2 the batch...think I prefer just the chocolate. 22 minutes was the perfect time. So good I ate 2 in a row!

Manicotti Alla Romana

Reviewed: Jun. 2, 2008
Way beyond my expectations! I made this tonight without the meat as we have vegetarians and meat-eaters in the house. I did not want to add the eggs but was unsure how it would turn out without them. I did not add salt and I'm glad I didn't because the salt level was perfect as is. I added some mozzerella, fresh ground pepper, fresh basil, and dried oregano to spinach/cheese mixture. I also did not cook the spinach first and I added a little nutmeg to the white sauce. I will invest in a pastry bag for next time as I used a freezer bag with one corner cut off, but it was really messy and difficult. I think the hole was too big. My box of manicotti came with 14 shells...I'm not sure how other people fit all 14 into the 9x13 dish. I only got in 8 but that was perfect to feed 3 of us. Everyone had 2 plates! Super delish! Will make again, may try with the meat although I don't believe its necessary.

White Chip Chocolate Cookies

Reviewed: May 24, 2008
pretty good cookie. i increased to 2 c. white chocolate chips, used 1 1/4 c. white sugar and 3/4 c brown. the first batch was a little burned on the bottom, (dropped by tsp and baked 8 mins.) second batch i made doubled the size and only baked 6 mins. they were perfect! will make again and perhaps add macadamia nuts. cookies totally hold their shape, so i pressed down slightly.

Soft Oatmeal Cookies

Reviewed: May 18, 2008
Made a huge batch of these, in 1/2 I added chocolate chips, and the other 1/2 white chocolate chips. Also added gr. cloves as another rater suggested. Did not like the flavour, think it was the cloves, and found them salty. Only gave 3 stars due to odd taste, but then again, I am not the greatest baker.

Peanut Butter Marshmallow Squares

Reviewed: May 18, 2008
My family and I ate all of these bars in 2 days...could not keep my fingers out of the bowl, and had to lick the spoon! Left out nuts and coconut. Stored them in the fridge. Will definitely make again just not too soon as they are quite rich.
