Pasta e Fagioli III

Who knew? What an awesome use of the leftover ham and bone. This makes a lucious, hearty soup no matter how you may change it to your preference. The ham give it a rich wonderful flavor.

Chicken with Grape Tomatoes and Fried Basil

I cannot imagine why anyone would rate this as bland. I forgot the fresh basil ( even though I had it in my garden). It was just delicious. Put marinade in the baking chicken topped with sauted basil and tomatoes then fresh mozarella,perfectly yummy!

Rocco's Olive Bread

I made this recipe today. It is indeed fluffy. Fluffed over the top of my bread mixer container. The flavor was O.K., but way too much fluff, not even browned on top. I will not make this again.

Angel Hair with Feta and Sun-Dried Tomatoes

I made this tonight to go with fish. It is a simply wonderful versatile resipe that is very fast and easy and herbs and chees can be adjusted to your taste. Please add lots of sun dried tomates, they really make this dish.

Garlicky Beet Delight

I cheated also, used canned beets. Looking for something extra to go with dinner, I made these exactly as per recipe, but could not resist adding fresh basil as another suggested and I have an abundance of fresh herbs, love to use them whenever possible. No leftovers for tomorrow. DH and I ate them all.

Salad Nicoise

I used the lemon pepper tuna in the vacumme pack. Deleted the anchovies(personal preference). This was so very, very good. Just ate the soggy lefteovers tonight, still simply delicious. I totaly recommend this recipe.

Freezer Cucumber Pickles

This recipe is wonderful. So much better and easier than heating up the kitchen with a canning pot for pickles that turn out mushy or wrong. I added dill seeds. These pickles were the best!

Basmati Rice

Who knew?? Such a simple recipe, soo good. Will make it time and again. Start with an excellent recipe and tweek it your way,it's still an excellent recipe. I read the reviews and add what I like after reading the reviews This time I added some dried cilantro, whole peppercorns and about 1+ tbsp butter and some salt. I'm not especially great lover of rice, however this was outstanding. I gonna go find the leftovers right now!

Curried Coconut Chicken

This recipe is definately a 5, no matter how you "tweek" it according to personal taste. I used 1 Tbsp red curry paste sauted in the oil with 1 large dice onion and 2 cloves garlic,4 pieces fresh lemon grass, @ 1 tbsp fresh basil. Added the chicken, 3 large diced potato, several baby carrots cut on diganal, 1/2 can leftover tomatoes and 1/2 half can leftover tomato paste and 1 and 1/2 can leftover coconut milk. IT WAS THE BOMB! Much better than our local Thai restaurant, served with Thai Cucumber Salad made with sesame seeds instead of peanuts. Curry served over Jasmine rice. Possibly the best dinner I've made and my profession is a cook!

Thai Cucumber Salad

This was fabulous with Curried Coconut Chicken(this web site).Didn't have fresh cilantro, used dried, let it mingle with other ingts. Didn't have peanuts, used toasted seasame seeds,didn't have jalapenos, used red pepper flakes, Awesome recipe,, however you tweek it.

Onion Pasta

This is a wonderful recipe! A wonderful recipe can be changed to ones personal taste. You have the basic and are able to add and subtract to suit your family or health issues and it still turns out fabulous. I totally recommend this with whatever changes you make to the basics of this. Be sure to carmalize the onions thats the key.

Stuffed Peppers with Turkey and Vegetables

My husband had a heart attack a few weeks ago so we have been trying lots of low fat, low sodium recipes. This is a wonderful, tasty recipe, best stuffed peppers wev'e ever had. A real keeper and one to pass on to others.

Curried Bean Salad

We love this salad. Such a wonderful change from the usual three bean I've used for years.Didn't have celery so used sliced water chestnuts (wonderful) also used balsamic vinegar and olive oil. Next time I'll at least double the curry powder. Tonight I had 2 bowls of the leftovers sprinkled with curry powder...............delicious. Don't forget FRESH oregano.............it grows like a weed in my yard!

Balsamic Vinegar Potato Salad

I must share what I did with this super recipe. I made it as is to take on a camping trip. It was wonderful(my husband agree) the first night with our marinated barbaqued chicken. The next night we had steak. I heated the leftover potato salad in a skillet when the olive oil was hot. After heating a few minutes I added some sour cream. It was so good "the second time around" with our steak. I have to say, Yum,O.
