Winter Fruit Salad with Lemon Poppyseed Dressing

I made this salad twice over the holidays. The first time I made it I used two heads of romaine lettuce and made the dressing as directed. The salad was swimming in the dressing! The second time I also used two heads of romaine and cut the dressing in half and it was perfect. I also decided to use craisins instead of regular dried cranberries and liked it very well. A great tip I read from another reviewer was to store the chopped apple and pear in the dressing when transporting the salad so they don't turn brown - great idea!

Smooth Sweet Tea

This is perfect sweet tea! I cut back on the sugar (my sweetness preference) and I use a combo of 4 regular Lipton tea bags and 2 orange & spice tea bags. Very refreshing!

Cinnamon Chip Muffins

These are perfectly delicious as written. I tossed my mini chocolate chips right into the flour so they were coated and wouldn't sink to the bottom of the muffins. They are very moist and delicious. If yours aren't moist, you either over-mixed them or over-baked them! My kids couldn't keep their hand off them!

Chicken Enchiladas II

These were really good! I did change the recipe up as others mentioned using cream of chicken soup and adding chicken taco seasoning. I also have to agree with another reviewer that this fills 6 - 6" tortillas, not the 12" tortillas. I made this with the Mexican Rice I recipe and it was a great meal!

Mexican Rice I

This rice was great! I added 1/2 can of drained petite diced tomatoes, along with a chicken bouillon cube and followed the rest of the recipe as written. I have to beg to differ on the serving size though; this rice fed my family of 4 and I can't imagine getting 7 servings out of it. Great recipe!

Authentic German Potato Salad

This is excellent - our entire family enjoyed it! I've made it twice in the last week, and my daughter asked me to make it again to take along camping this weekend. A HUGE timesaver I found is using two 15 oz. cans of potatoes. I drain them, then slice them in my food processor and follow the rest of the recipe as written. I bet it easily cuts the prep time in half! Great recipe!

Oatmeal Chocolate Chip Muffins

Great base recipe if you make changes like others have suggested. I used 1/4 c. applesauce & 1/4 c. oil, added 1 tsp. vanilla, cut the baking powder to 2 tsp, and omitted the nuts and topping all together. They turned out wonderfully and were a big hit!

Mocha Chocolate Chip Banana Muffins

Excellent muffins if you decrease the butter/margarine by half, and only use 3/4 c. sugar. I also only used 2 bananas and they were perfect! My kids LOVE them!

Chewy Peanut Butter Chocolate Chip Cookies

These were really wonderful cookies! I did make alterations like others suggested; added 1/2 cup of peanut butter and decreased flour by 1/2 cup. I made these with a cookie scoop and got 5+ dozen!

Chunks of Glass

This was GREAT! I made it for my daughter's birthday party and everyone loved it and there wasn't any left by the end of the party; that RARELY happens with jello. I omitted the graham cracker topping, I thought it would ruin the look. I actually don't have a gelatin mold; I used a bundt cake pan and it worked out perfectly. This is a PERFECT gelatin salad for those of us who don't like fruit floating in our jello!

Soda Pop Cake

I made this for my daughter's birthday and used cherry gelatin & cherry soda. It was tasty and everyone thought it was "interesting". It definitely needs to be eaten in a day or two, otherwise it turns to mush.

Barbequed Marinated Flank Steak

This was a great recipe! I added chopped garlic to it and marinated it for 48+ hours. We took it camping this weekend and shared it with friends who also wanted the recipe. For those reviewers who say it was tough, remember that you need to slice flank steak against the grain!

Baked Pork Chops I

These were EXCELLENT! Even my kids enjoyed them because the meat was so tender. I sauteed 8 oz. of sliced mushrooms in 1 T. of butter and added them to the soup mixture. YUM!
