Wine Jelly

I just made a batch of this and it is in the water canner. I used homemade blueberry wine. The color is gorgeous and the tatse devine! Since my powdered pectin was only 1.75 ounces, it set beautifully. Next batch will be with homemade blackberry wine!

Chicken Enchilada Casserole II

This just came out of the oven and the aroma was so heavenly we could not wait! After reading some of the reviews, some changes were made. I used 8 ounces sour cream, corn tortillas and added black beans and shoe peg corn in place of the chili beans. I did not have boneless chicken, but stewed chicken breasts in chicken broth with green chiles and ground red pepper. Shredded the chicken and mixed with a packet of taco seasoning. Mexican cheese blend was substituted for the cheddar cheese. I also omitted the onions. This one is a keeper!

Simple Hamburger Stroganoff

This was a hearty meal! I did make some modifications after reading reviews. I added garlic and onion powder to the ground beef while browning it, omitted the mushrooms as we are not huge mushroom fans, increased the milk to about a cup and a half, used cream of chicken and mushroom soup and 3 ounces of cream cheese. Had this for dinner with German red cabbage and dark wheat bread. Awesome!

Banana Spring Rolls

Simply delicious! I took the time to find spring roll wrappers made with wheat flour and not rice. The most time consuming thing about preparing this was separating the spring rolls. We didn't use a lot of brown sugar and will use more next time and will also use riper bananas. We sprinkled them with cinnamon sugar as recommended by others and that really adds to the flavor. Try this with cherry pie filling, serve with vanilla ice cream and drizzle with chocolate!

Quick Hoppin' John Soup

This is the best! I was looking for something different than the same old blackeyed peas and rice. This recipe fit the bill. I used one 28oz can of crushed tomatoes as this is what was in the cupboard then omitted the water and salt. Also did not add any additional seasonings. The end result had a stew consistency that set off the Southern Collards (from allrecipes) and pan-fried cornbread. This one is a keeper!

Chicken Biryani

I made this as a covered dish for our foreign exchange student's orientation. It was a huge hit. My son, who is a picky eater, told me the recipe was a keeper! I did not have cardamomor powdered saffron. I used a biryani spice mix, omitting the spices included in the mix. I also used saffron threads, which probably would have made the rice a beautiful yellow had I known how to use it properly. Thank you for sharing this wonderful dish!

Brown Rice

This is a favorite at my home. I omit the basil, use consumme with a little water instead of broth and put 3-4 pork loin chops on top before putting it in the oven. Thanks for the recipe Monica!

Perfect Turkey

This was without a doubt the best turkey I have ever cooked. I didn't have room in the fridge for a stockpot (the bird was 23 pounds) so I used a cooler, 2 bags of ice and covered all in water. It worked like a charm. Also increased the veggies as others had recommended. This recipe is definitely a keeper.

Apple Pie

I am relatively new to pie baking and this makes a lovely apple pie. I used a pie ring towards the end of baking to keep the rim from over browning. Would definitely bake it again.
