Beef Pot Roast
I was looking for a different way to cook a roast without the usual potatoes and carrots, and this fit the bill. The recipe was followed to the letter, and the house smelled wonderful! My "meat and potatoes" country boy loved it. This is definitely a keeper.

Jerre's Black Bean and Pork Tenderloin Slow Cooker Chili
Fabulous! I cooked it on the stove sauteing the onion and chunked tenderloin. When the onion became translucent the other ingredients were added after draining two cans of the black beans. After bringing to a boil, the chili simmered between 60 and 90 minutes before the tenderloin was removed and shredded. The tenderloin then was placed back in the pot with two cans of Rtoel tomatoes with green chilis. This one is definitely a keeper.

Homemade Pork Sausage
We will never buy ready-made sausage again. My husband, who is a born and bred country boy, loved it. I used fresh ground pepper and sea salt. I only have rubbed sage, so broke out the mortar and pestle and ground all the seasonings together. I used a quarter-cup measuring cup and made 14 nice sized patties. This one is definitely a keeper! As we say down south...we are in hog heaven!
