Excellent recipe! I did as others mentioned and put a little picante on the bottom of the bake-ware before the enchiladas. I also added cooked shrimp just before I rolled up the enchiladas which worked great. I didn't want to overcook them by putting them in the skillet with the mix, but doing raw that way would definitely add to their flavor! Very pleased, and will definitely make these again!

I had dry lentils,rice and black beans to use for dinner...and this was a perfect recipe! I only added what I had on hand (bell pepper, garlic, onion & tomatoes) and with the seasonings...it was delicious! Not a soup consistency...more chili/rice and beans. Very flavorful and great with cornbread!

Excellent recipe, it is great alone, or as a base for more ingredients. Probably best salmon cake I have eaten.
