Autumn Cheesecake

Reviewed: Sep. 21, 2008
This is one of the best cheesecakes ever! I followed several of the suggestions, but I think it would have been good as written too. I'll definitely have to take this to work because it's too dangerous to leave in my fridge!

Classic Macaroni Salad

Reviewed: Jul. 4, 2008
This is the macaroni salad that I've been looking for... just like grandma's! It did need a little more dressing though- about 1/2 of the recipe more. Other than that it was perfect! Thank you for posting! :)

Southern Peach Cobbler

Reviewed: Jul. 4, 2008
Excellent (and up until today, I hated peach cobbler and baked peach pie)! The only thing that I did differently was to use Splenda in place of the white sugar in order to cut out a few calories and it was fine.

Fresh Strawberry Pie I

Reviewed: Jun. 10, 2008
Fresh Strawberry Pie has always been one of my favorite summer desserts. This recipe is a fool-proof version. It was only enough to make 1 pie, but it was yummy! I found strawberry daiquiri jello and it was a good change.

Quick Graham Cracker Cake

Reviewed: Jun. 7, 2008
When I made this cake, I wasn't sure what to expect. It turned out a little on the dry side which makes sense when you add extra dry ingredients, but use less wet ingredients. Instead of the whipped cream, I filled it with marshmallow cream and topped it with chocolate icing to make a smores cake. It wasn't bad, just crumbly. Hopefully, I can work on it a little because I really like the flavor combo with the chocolate and marshmallow.

Chipotle Crusted Pork Tenderloin

Reviewed: Jun. 1, 2008
We tried this on pork chops. I couldn't find the chipotle powder so I used hot Mexican chili powder and regular powder instead. It was really good. Next time I might add a little more brown sugar so that the sweetness is a little more prominent.

Country Fried Squash

This was a great squash recipe- the best fried squash that I've ever made! I used seasoned salt instead of the seasoning in the recipe.

Easy Paella

Reviewed: Apr. 4, 2008
I thought this was just ok. My husband hated it, but he's not a big fan of shrimp. I picked his out, but it still had the shrimp flavor. It probably would have been better without the lemon and it also needed more chicken stock for the rice to cook thoroughly. This recipe has many great reviews, so maybe paella is not for us. :0)

Soft Pretzels

These were easy to make and tasted good when eaten warm. As they cooled, they got kind of dry. When they came out of the oven, I sprayed them with spray butter and dipped them in cinnamon sugar- yumm!

Chocolate Trifle

Yumm! I used chocolate cool whip in the pudding mixture which made it richer and fr. vanilla cool whip for the rest. Everyone loved it and it only took about 10 minutes to assemble.

Rice, Broccoli 'n Cheese Cups

Reviewed: Jan. 6, 2008
I thought these were easy to make, but bland. They needed more ranch dressing or seasoning. It would probably be a good side for kids. The texture was good and the muffin size servings were cute. Next time I would definitely add more flavor.

Turkey Dumplings

Reviewed: Nov. 24, 2007
This is the perfect comfort food! I added some chopped carrots, onions, celery, garlic and herbs for more flavor, but I think it would have been good as written. I've seen several recipes with biscuit dumplings and I was really skeptical about them, but they were really good! Thanks for this easy and yummy recipe!

Cranberry Chutney I

I made this with just 2 Tbsp of vinegar and it was still wayyyy too strong. I think I will try it again without the vinegar and maybe a little more sugar. My mother-in-law really liked it though.

Slow Cooker Creamed Corn

Reviewed: Nov. 23, 2007
Simple, but you definitely have to keep your eye it so that it doesn't burn. I wouldn't recommend cooking it on high. It started burning around the edges after less than an hour on high. I just thought the corn was ok, but my husband really liked it. Although, he likes just about anything with corn in it.

This was really yummy and fairly easy to make. I've never had homemade caramel popcorn before now! I lined my pans with foil and then sprayed with cooking spray. It made clean-up a lot easier!

Chicken Fajita Pizza

Reviewed: Oct. 12, 2007
This is one of my favorite taste of home recipes. I put a little cornmeal on my pizza pan before pressing the crust into it. It makes the crust crispier on the bottom. I eyeball the quantities and adjust it to our tastes and cut all of the chicken and veggie pieces into bite size chunks. If you cut up your chicken and veggies the night before, this is a quick and easy recipe to throw together after work.
