Cheese Ball I

Reviewed: Nov. 29, 2009
Great cheese ball recipe- it was a huge hit with my family. The only things that I did different was to replace the parmesan with monterey jack cheese (dad hates the stinky cheese) and add some minced red peppers for color and some added crunch. I also added some more of the spices until I was happy with the flavor and let it all sit in the fridge overnight, which I think made it all the better. Can't wait until Christmas to serve it again!

Too Much Chocolate Cake

Reviewed: Nov. 24, 2009
SUPER cake recipe! Here are the things that I did different: I used a 3.9oz pkg of instant pudding as that is all I had; I added 1 tsp. of vanilla extract and I subbed the water out for Kahlua! I heated the slices up and served them with vanilla ice cream and fudge sauce- YUUUMMMMYYYY!! Once it was all heated up and served that way, it tasted a lot like the Molten Chocolate Cake that Chilis serves. I'm thinking of adding peppermint extract and peppermint schnapps for a holiday version-we'll see how that turns out!

Best Big, Fat, Chewy Chocolate Chip Cookie

Reviewed: Oct. 30, 2009
Loved this cookie recipe! I really think that having an egg yolk instead of a whole egg is the trick to this recipe, as egg whites tend to dry dough out. My cookies turned out great, except that they became less chewy as the hours went on and the next day they were crispy. I think that I just need to store them in a better container next time, as my Tupperware container didn't keep them chewy enough.

Kay's Spaghetti and Lasagna Sauce

Reviewed: Jul. 29, 2009
I was expecting more from this recipe and was disappointed that I didn't get it :( I ended up having to add a lot of red pepper flakes, more italian seasoning and some red wine to balance the flavors out.

Red Cabbage Salad II

Reviewed: Jul. 26, 2009
This is a very good recipe! The only thing that I changed was to add more salt, pepper and vinegar, given that I didn't think that there was enough of those ingredients. It also got better as it sat in the fridge and melded flavors :)

Watermelon and Strawberry Lemonade

Reviewed: Jul. 20, 2009
LOVED this recipe! I took the advice of another reviewer and froze my watermelon chunks and added less ice for a more concentrated watermelon flavor. I also added some blueberries that I wanted to get rid of and they gave the drink a little extra color and flavor as well :) Great stuff on a hot day!

Whipped Cream Frosting

Reviewed: Jul. 18, 2009
This frosting was great! I didn't change anything in the actual recipe, just the method. I made sure to chill the cream, beaters and my bowl before I began and it turned out great; a much better alternative for a lighter "summer" frosting as opposed to a heavier buttercream.

Rosemary Ranch Chicken Kabobs

Reviewed: Jul. 6, 2009
I liked this chicken dish, but I was hoping that it would have a VERY flavorful taste to it. It was tasty, but not what I expected. The only thing that I did different was use whole, skinless and boneless chicken breasts and let them marinade for about 5 hours. I also made fresh ranch from one of those Hidden Valley packets; maybe the recipe would taste better if I had used bottled ranch? I loved the rosemary flavor and actually would put more in next time! All in all, it was a good recipe and I will come back to it and give it another shot.

Microwave Lemon Curd

Reviewed: Jun. 28, 2009
The ease of this recipe for me was what earned it the 3 stars, but I was disappointed with the taste. Mine was WAY too tart, even after adding another 1/2 cup of sugar. Perhaps my lemons were just too tart, as they came fresh from a neighbor's tree and not the grocery store. I also added a little slurry of cornstarch and water to thicken it and left it in the fridge overnight to get the consistency that I wanted. Even though the taste was not what I was looking for, I am willing to try this again.

Potluck Rice Pilaf

Reviewed: May 31, 2009
Liked this rice a lot! I scaled the recipe down to 4 servings and used less soy sauce- I just kept adding until it tasted right to me. And since I didn't have chicken granuals to use, I just cooked the rice in chicken broth. I also think that toasting the almonds for this recipe are key to making it taste extra good.

Blueberry Cheesecake Pie

Reviewed: May 31, 2009
Very good pie! I cheated and used a ready-made graham cracker crust but it still tasted great. I also added a few tablespoons of lemon juice to the cheesecake mixture and to the blueberry mixture and did not top with whipped topping. Super yummy!

Quick and Easy Green Chile Chicken Enchilada Casserole

Reviewed: May 6, 2009
My husband and I really enjoyed this recipe! I did not char the tortillas at all- don't like the flavor- and instead I mixed the sour cream, chicken, canned green chiles and some green peppers and onions all together and then did the layering with the sauce and cheese. It was hot the day that I made this so instead of using my regular oven I used my toaster oven and it turned out great!

Homemade Crispy Seasoned French Fries

Reviewed: May 6, 2009
Loved the batter of this recipe, as it did provide a very crispy french fry, but I hated the mess! LOL. That's probably my hubby's fault, as he was manning the deep fryer and is a VERY messy cook :) I can't wait to try this on other things, like onions or other veggies. Oh, and I used beer in place of the water, as we both love anything that is beer battered!

Best Lemonade Ever

Reviewed: May 6, 2009
I loved how easy this recipe was; I took the advice of another reviewer and microwaved the water and sugar and put some ice cubes in it to cool it. The only drawback that I could see with this recipe is that it was too sweet for my husband and I so I added less sugar. To make it more to our tastes, I just added some more water and the juice of one extra lemon. Very good!

Beth's Spicy Oatmeal Raisin Cookies

Reviewed: Apr. 16, 2009
My husband LOVED these cookies and could not stop eating them while they cooled. The only thing that I would do differently is eliminate the cloves and replace it with more cinnamon and a pinch of nutmeg- it was a little strong for me. Other than that, a great cookie!

Grandmother's Buttermilk Cornbread

Reviewed: Apr. 3, 2009
I loved how fun and unique this recipe was to prepare; what I would change next time is the baking time. My cornbread turned out a little dry, but I think that may be my oven. Next time I will reduce the baking time and just let it continue to bake while it cools on a rack.

Soft Sugar Cookies IV

Reviewed: Apr. 3, 2009
I really loved making these cookies, as they were easy to prepare and tasted great! What I ended up doing was making the dough into about 1-inch balls and freezing them, so I could have a few cookies whenever I wanted instead of a whole batch just sitting there staring me in the face- lol. They still tasted great after being frozen and I didn't even frost them!

Chicken Stroganoff I

Reviewed: Mar. 21, 2009
Well, I liked this enough to eat it and be satisfied, but it was just missing something. I put it into the crockpot and added sliced onions then fresh baby portabello's about 30 minutes before eating it. I just kept tasting the canned soup and I would like to find an authentic stroganoff recipe that didn't use any canned/boxed ingredients.

Quick and Almost-Professional Buttercream Icing

Reviewed: Feb. 19, 2009
Well, I am only giving this recipe three stars because of the taste; if I were judging strictly on the consistency, I would have given it at least four stars, if not five. For some reason, the taste was just not what I was expecting, as it didn't have that "professional" flavor that I was looking for. I am wondering if the taste would have been better if regular butter had been used and not unsalted. I would like to try that method and see what happens.

Roast Sticky Chicken-Rotisserie Style

Reviewed: Feb. 18, 2009
My husband and I thought that this recipe was very good; the only thing that I didn't understand was how the chicken was supposed to be "sticky". I adapted the recipe to my own needs, using 3 large bone-in, skin-on chicken breasts and half the amount of the original seasonings called for. I also replaced the white pepper with lemon pepper- does anyone ever have white pepper in their kitcen? I placed the chicken breasts on a bed of onions, celery, carrots and lemon wedges and then added about a cup of chicken broth to the roasting pan. I let the dish sit in the frige overnight and then baked it all at 250 for about 3 hours. The chicken was very moist and flavorful and I am looking forward to the leftovers, that's for sure! I would like to play with this recipe, adding some fresh herbs to the mix next time and maybe getting rid of the lemon wedges and lemon pepper. Anyway, it's a great recipe and I will make it again!
