Strawberry Rhubarb Pie III

This was a very good recipe. The crumb topping really makes the pie. It was just sweet enough, not too tart, and the orange zest is a great flavor to add. Will keep this one!

Easter Eggs

This is an easy recipe to mix up, and quick too. I tested them by taking them to work, and they were gone in minutes with rave reviews. Great recipe that looks good and tastes great! I dipped the coconut ones in dark chocolate for that "mounds" taste.

Spinach and Leek White Bean Soup

This soup is fantastic! I did have to add more liquid, and I used frozen/thawed spinach, as it was what I had. Will definately make again and again.

Quick Chicken Cassoulet with Artichoke and Olives

This was the first time I'd made a cassoulet of any kind. I used cannalini beans. It tasted great, but lacks visual appeal. It was very gray looking, and needs something for color. Otherwise, very tasty.

Spinach Veggie Casserole

This was delicious! I did need to change it up a little, though. I used cannelini beans in place of the corn, and I always use brown whole grain rice. Also, I didn't have Swiss cheese, so I used mozzerella and a little muenster I had.I topped it with some feta cheese. Extremely flavorful!

Strawberry Pretzel Salad

I've been making this dish for many years. One varition: I sometimes use fresh strawberries, just add some ice cubes in with the jello and berries to help thicken it better. Also, I use sugar free jello & you can't taste the difference.

Crustless Spinach Quiche

This is delicious as a healthier version (without the crust). I've made it with different types of cheese for a different flavor each time. A smoked cheese (like smoked gouda) is good, also a good shredded parmesan/romano. Mushrooms are also good in it.

Excellent recipe! Easy and delicious. I took another rater's advice and used 1/2 sour cream, 1/2 mayo. I also added a little salt/pepper and pinch of garlic salt.
