About this Cook
I've been cooking since I was a teenager, and I still love to cook!
My favorite things to cook
Pretty much anything.
My favorite family cooking traditions
"Funeral potatoes", a special rice krispie treat with a twist, Mom's cinnamon rolls, grandma's fudge, pot roast on Sunday
My cooking triumphs
A few really good cheesecakes, cookies, brownies, lots of chicken dishes; I make a mean beef pot roast.
My cooking tragedies
I had trouble with pie crust until I got my Kitchen Aid mixer. Now it's a little better, still not great. Also, I can't make a good hollindaise sauce.

Quick Chicken Cassoulet with Artichoke and Olives
This was the first time I'd made a cassoulet of any kind. I used cannalini beans. It tasted great, but lacks visual appeal. It was very gray looking, and needs something for color. Otherwise, very tasty.

Spinach Veggie Casserole
This was delicious! I did need to change it up a little, though. I used cannelini beans in place of the corn, and I always use brown whole grain rice. Also, I didn't have Swiss cheese, so I used mozzerella and a little muenster I had.I topped it with some feta cheese. Extremely flavorful!

Strawberry Pretzel Salad
I've been making this dish for many years. One varition: I sometimes use fresh strawberries, just add some ice cubes in with the jello and berries to help thicken it better. Also, I use sugar free jello & you can't taste the difference.
