Excellent! I substituted two of the chili beans cans for black beans and left out the celery. I would use a little more cayenne pepper next time, but other than that, perfect!

Sugar-Free Frosting

The consistancy was like Chocolate Mousse, but we liked it ok. I used chocolate pudding, skim milk, reduced fat cream cheese, and lite whipped topping. Next time, I'll take other people's advice and adjust it for a thicker result. I may even make it again the same way for a sugar-free Chocolate Mousse substitute!

Scalloped Cabbage with Ham and Cheese

Really good. Used low-fat shredded cheddar. My husband and kids weren't expecting much, but were pleasantly surprised. This would probably would be good with hamburger and/or ground pork, too. Thanks!

Lazy Man's Pierogi

You know, this is a lot better than I thought it would be. I got healthy with it and used turkey bacon, whole wheat pasta, and fat free soup. Still good, everyone liked it. More bacon next time (I should've listened to everyone else).

It was good; I substitued green beans and added 1/4 cup french fried onion bits on top...I think I will add even more french onion bits next time and maybe cream of mushroom soup instead of chicken.

Quick Vanilla Frosting

No, this isn't a "traditional" frosting, and some people will be disappointed, but it depends on your taste. I've had frosting like this before,and it's a big hit in my family. It was great for the "Ariel (The mermaid)" b-day cake my daughter requested. I added blue food dye and the peaks in the frosting looked like waves. Thanks :)

Downeast Maine Pumpkin Bread

I made these into muffins. I used splenda instead of sugar, applesauce instead of oil, and half of the flour was whole wheat. Still very good and moist!
