About this Cook
I'm a purest when it comes to cooking. I come from northern Ohio where Maple syrup is produced so the thick gooey syrup stuff wall street tries to market as syrup doesn't fly with me. I also love "TRUE" Belgian waffles. (Cooking waffles on a "Belgian waffle" iron does not make them Belgian waffles. Using yeast does). Cooking can be an art but it's also a science which means if you understand that part of the process, your recipes will be better for it. So, now you know I am a snob about some aspects of cooking. I know what I like and I like what I know. There are many simple things one can do that have been lost over the years that can make one's baking/cooking much better. Now, about this Orange thing. I wear something ORANGE every day of the year EXCEPT for halloween...I love music, football, family, friends and faith (not in that order). My Orange, though, has nothing to do with halloween. For me every day is an Orange day!
My favorite things to cook
I love to bake cakes. I love to "create" new ideas for cakes. I love the "science" of baking. I guess that's why I love the show "Good Eats" with Alton Brown...the best cooking show on tv. I wish there were new shows available.
My cooking triumphs
Creating one of the first Key Lime cakes (March of 2007). It took me two and a half years to perfect it and now I am seeing Key Lime cakes popping up everywhere.

Buttermilk Syrup
5 stars for ease of making. 3 stars for consistency. I like my syrup to be like "REAL" maple syrup (Grade A is thin & like water) and this was more like a sauce so I added 1/2 cup more buttermilk. I give it 6 stars for its rich, caramel-like flavor. If you don't like real sweet, you won't like this. Although a maple syrup "lover" and purest, I now prefer this. Absolutely delicious!

Hot Spinach Salad
What a marvelous salad. The bleu cheese is perfectly offset with the Balsamic Vinagrette recipe from this site. I also added seasoned chicken breasts (seasoned with onion soup mix and cajun seasoning) and it became a complete meal not only from a consumption standpoint but from a nutritional one as well. O'Charly's Chicken Pecan Salad can now take a back seat to a new champion and I can make it in my kitchen.

Irish Cream Bundt Cake
This cake is the "winnah!" I make mine extremely moist by poking holes in the bottom with chopsticks (after it has cooled for about ten minutes) and pour some of the sauce in the holes before flipping the cake over and pouring the remaining sauce over the cake and covering it with the pecans. (Double the amount of pecans and throw some onto the sides also). Just be prepared to give out the recipes.
